This is shibumi (5.5%): a single ipa blended down with our golden sour base. miso in the whirlpool. fermented with cherry. finished with chamomile flowers. we’re calling it an ipa cuvée.
the beer pours a sun faded rose color with blonde edges. it’s light, whispy head yields quickly to the miso and a generous amount of oats. a soft, honeyed chamomile nose reveals aromas of tropical summer punch bowls. on the palette, the miso adds texture: one we haven’t come across in a beer before. it’s the perfect floral, umami support for the cherry and chamomile. yellow chartreuse meets poolside cherry popsicles. salted plum. mellowing sleepy tea hangs around on the finish. ⠀
pilsner malt, raw + malted wheat, flaked + malted oats. dry hopped with el dorado, finished on amarillo and ekuanot powder.
