1 cup unsweetened shredded coconut
3 tbsp raw agave or maple, or stevia to taste
2 tbsp virgin coconut oil 
1/2 tsp pure vanilla extract
1/8 tsp salt
3 oz chocolate chips (or see raw substitution below)
1 tsp oil, optional

Process first 5 ingredients in a food processor or blender. If using the stevia version, add extra coconut oil as needed. Line a plate with wax or parchment paper. Form blended mix into patties. Freeze until firm. (If the mixture is too sticky to make patties, put it in a bowl and freeze for only a few minutes, until it’s firm enough to shape). Carefully melt the chocolate. I like to stir in the optional 1 tsp oil before melting because it makes a much smoother chocolate sauce that more easily coats the patties and enables you to use less sauce overall. Dip patties into the sauce, then re-freeze until firm. .

For a raw version, omit the chocolate chips, and mix together the following as a coating instead: 1/4 cup each cacao powder, virgin coconut oil, and raw agave. (You could also sub the sweetener for additional coconut oil and sweeten with stevia instead.)

Blueberry and lemon curd loaf by @panaceas_pantry ❤️🍋🍞

3 cups (375g) plain flour
3 tsp baking powder
1 tsp salt
1 Tbsp lemon zest
3/4 cup thick coconut yoghurt
3/4 cup almond milk
2 tsp vanilla extract
1 cup (220g) castor sugar 
1/2 cup grapeseed oil
1/4 cup lemon juice

Method

1. Preheat oven to 170 degrees C, and grease and line a large tin loaf. Set aside. 
2. In a medium mixing bowl, add all wet ingredients (listed from yoghurt down to lemon juice) and whisk together well. 
3. In a large mixing bowl, sift in flour and baking powder. Add salt and lemon zest, and combine. Pour the wet ingredients into the bowl, and gently incorporate until just mixed together (the batter should be smooth). Add frozen blueberries, and gently fold through. Pour into prepared pan, then bake between 1 hour and 1hour 10 mins. For my oven, 1 hour and 5 minutes in perfect.
4. Allow cake to cool for 5 minutes before gently removing and cooling completely on a wire rack.

At this stage, your loaf is ready to eat. I think it is perfect as is, but if you would like to add icing (like in the picture) here is how;

1/2 can coconut whipping cream OR 1/2 cup coconut yoghurt
2-4 tsp powdered, freeze dried berries
1/4 cup icing sugar.

1. Sift icing sugar into a mixing bowl, then add remaining ingredients. Mix well, then allow to set in the fridge for 1 hour (if using the coconut whipping cream; yoghurt will not need to set). Spread over the top of your loaf, and generously decorate with fresh berries.

Serving;

This is best served at room temperature, but will need to be stored in the fridge if you frost it. To serve, simply remove a slice 20-30 mins prior, and allow to warm sligh

How are you treating yourself today?

Recipe for the chocolate caramel bars below:

For the base:
100g regular oats
85g honey or maple syrup
30g tahini
pinch of sea salt

For the caramel filling:
155g medjool dates (soaked in hot water for 20 minutes)
80g tahini
40g honey or maple syrup
25g water
pinch sea salt
1 tsp vanilla extract

For the chocolate coating:
150g dark chocolate
10g coconut oil melted
pinch sea salt

Instructions:
For the base:
1. In a mixer combine all the ingredients until they form a sticky mixture.
2. Put the mixture in a cake tin covered with parchment paper and press it with your hands or a spatula. Set in the fridge to set.

For the caramel filling:
1. Blend the medjool dates in a blender with the tahini and the honey, adding the water gradually, until a paste is formed. Add in the sea salt and the vanilla extract and blend again.
2. Pour the paste on top of the base and put it back in the fridge.

For the chocolate coating:
1. Melt the dark chocolate along with the coconut oil under low heat. 
2. Let it cool for 5-10 minutes.
3. Pour the chocolate over the caramel filling and put it in the fridge to set.
4. After about 30 minutes, remove from the fridge and cut into bars.

To steam beets, peel and chop into chunks-- then add to a steaming basket placed over a pot with a few inches of water. Bring the water to a boil, reduce heat to a simmer and cover for about 30 minutes to steam, when the beets are fork tender they're done. - 1 pack of @acaicph frozen açaí - 1/4 avocado (fresh or frozen)
- 1 handful of frozen strawberries
- 1 splash of oat milk (add more for your desired consistency).
blend well and top with nut butter, cacao nibs, coconut flakes, strawberries, blueberries, granola, orange and grapes 🌱

Here’s some blatant self-promotion— I absolutely love this picture of Gluten-free Oatmeal Fig Pancakes. I love the maple syrup drizzle and the lighting that makes it oh so peaceful. National Pancake Day was this week but I wanted to keep this picture for Friday so that this could be a weekend project for all of you! 
Couple of notes: separate the egg whites with the yolk and whip then until they form soft peaks. This gets them a little lift. I use oatmeal flour which is just store bought oatmeal that was blitzed up in a food processor. I add some chia seeds to give the oatmeal some texture and fiber. I add the figs right at the end so as to not flatten the batter that was lifted with egg whites. I add no sugar because to be honest it didn’t seem to need it. However, I do top the pancakes off with some unflavored greek yogurt, maple syrup, and a touch of turmeric. Maple syrup is a great alternative to refined sugar with a lot more antioxidants than any other form of sugar. The turmeric adds no flavor but I just love the speckled yellow color it adds (plus it’s reported to have amazing health benefits!). Get the recipe from the link in my bio 💫

3. Mix in chocolate chips, then roll into balls (I made 12)

Braised Greek Chicken with Olives and Feta
4-6 servings
6 garlic cloves, divided
1 teaspoon dried oregano
½ teaspoon red pepper flakes
Finely grated zest of 1 lemon
1 teaspoon fine sea salt
2 tablespoons preferred vegetable oil, divided
6 bone-in skin-on chicken thighs
1 medium onion, thinly sliced
2 cups chicken broth
6 sprigs fresh thyme
½ teaspoon black pepper
1 medium lemon, thinly sliced
¾ cup pitted green olives
½ cup crumbled Mt VikosⓇ Barrel-Aged Feta
Directions:
1. Preheat oven to 375℉.
2. Mince then mash 3 of the garlic cloves into a paste and transfer to a small bowl. Add oregano, pepper flakes, lemon zest, salt, and 1 tablespoon oil. Rub this mixture all over chicken thighs and under the skin.
3. In a large ovenproof skillet heat remaining 1 tablespoon oil over medium. Add chicken, skin-side down and cook until browned, about 5 minutes. Transfer to a plate.
4. Add onion to skillet and saute until softened, 6-8 minutes. Smash remaining 3 garlic cloves and stir them in. Cook 1 minute more. Stir in broth, thyme, and pepper. Place chicken thighs on top, skin-side up. Arrange lemon slices and olives around chicken.
5. Place chicken in oven and bake until the internal temperature of the thighs reaches 165℉, 30-35 minutes.
6. Right before serving, sprinkle chicken with feta.

I’m Katy, 31 year old new mom and wife out of Metro-Atlanta, GA. I have a super rad husband (who consumes all the food you see), we’ve been together for just shy of 11 years. We have the most precious 9 month old little boy. These guys are not only my best friends, but the loves of my life!

I started to really take a knack for cooking once my husband and I moved in together. As a child I always loved ‘fancying’ up the pasta sauce with spices, etc. But since then, have really loved creating easy, realistic, ‘mostly healthy’, meals for the two of us. We live a busy life, but we never spend dinner apart. Sitting down as a little family is my big thing, if that’s what brings us together in this hectic season of life, then I will make it happen!(Even if it’s sitting at the coffee table in the living room - this is most nights😂)

hi friends,
i’m katy, 31 year old new mom and wife out of metro-atlanta, ga. i have a super rad husband (who consumes all the food you see), we’ve been together for just shy of 11 years. we have the most precious 9 month old little boy. these guys are not only my best friends, but the loves of my life!

i started to really take a knack for cooking once my husband and i moved in together. as a child i always loved ‘fancying’ up the pasta sauce with spices, etc. but since then, have really loved creating easy, realistic, ‘mostly healthy’, meals for the two of us. we live a busy life, but we never spend dinner apart. sitting down as a little family is my big thing, if that’s what brings us together in this hectic season of life, then i will make it happen!(even if it’s sitting at the coffee table in the living room - this is most nights😂)
my goal is to be a fun, inspirational place for you to go for that quick meal. or maybe just a reference for your dinner menu for the week! let’s be friends, and enjoy in food together.. because food & drink is the real love language!❤️ happy friday friends!

Thank you to @buathairamenrobatagrill for the invitation to such a flavorful dinner last night. 🥰 Not only was everything delicious, everything was beautiful, and service was excellent. Definitely worth a try.

One of the stars of the night was the rock shrimp lychee. Think of Cantonese honey walnut shrimp, boost the goodness by a hundred percent, then add lychees and thin crispy fried noodles. Even the bed of greens it was served on tasted good with the sauce. 🤤

I also thoroughly enjoyed the Thai ramen. It was a green curry ramen with pork belly. The pork was super tender, the broth was the perfect level of spice, and the noodles had the perfect bite. Keep swiping for a noodle pull. 😋

Rock shrimp lychee (A+), crispy duck bao (C+), chicken satae (B), Thai spinach noodle with organic BBQ roasted pork belly and blue crab meat (A-), green curry ramen with pork belly (A+), mango sticky rice (A-), Thai iced tea (A+), Maitai (B) and Chiangrai lycheetini (B+).

So if you know me personally, you know that i quite frequently become obsessed with random foods at random times. to the point where, i (no joke) have eaten the same thing 5 days in a row. last week, my obsession was with french toast. 😍🥰 here is a homage to that. ⁣

.ideal pour les layer cake avec ganaches chocolat ce gâteau est très  humide comme je voulais ,moelleux et surtout pas bourratif .Il contient du Butermilk  fait maison (=lait ribot=Lben=babeurre) et du café  chaud dont on ne sent pas du tout le goût.Voici les secrets des instagrameuses US avec leurs superbes layer cake  bien moelleux!

.Avec cette quantité  j'ai pu en faire 3 identiques de 18cm.

.
.Commencer par préparer du Buttermilk si vous n en avez pas 300ml de lait +2 cuillères à soupe de vinaigre blanc ou jus de citron. (repos 15min a température ambiante).
.🍫Dans 1 saladier préparer les éléments secs:
285gr de farine 
235gr sucre 
2 cuillères à café  et demi de bicarbonate 
2 cuillères  à café  levure chimique
1 cuillère à café  de sel .
.
.
🍫puis ajouter les éléments liquides:
le Buttermilk 300ml 
180ml café chaud 
160ml d'huile
1 cas vanille liquide
3oeufs 
100gr chocolat fondu+1 cuillère
 à soupe de cacao non sucré .(Vous pouvez remplacer par 90 gr de cacao poudre )
. .enfourner a 175° pendant 30min.sortez le gâteau lorsque la lame du couteau ressort sèche.

Need a quick instant pot recipe for the weekend? Here’s our take on instant pot thai curry chicken in 30 minutes! I’ve doubled the recipe so just use half if you’re not doing this for a family of 4 hangry humans!

•Sauté onions , 4 tsp ginger & 8 garlic cloves
• Sauté 3 lbs chunks of chicken breast
•Add 8 tbsp of @thaikitchen red Thai curry paste & stir
•Add 2 cans of coconut milk
•1 or 2 chicken bouillon cubes
•4 tbsp fish sauce
•4 tbsp brown sugar
•Thai basil (save extra for a garnish)
•Sliced Carrots
•2 sweeet potatoes

•Pressure cook for 12 mins
•Naturally release
—
•Set back to sauté option
•Add Sliced red & green peppers
•Snow peas
•2 tbsp lime juice
—
•Simmer for 5mins
•Taste & add any additional seasonings if needed. •Serve over rice
•Top with fresh basil, lime wedge & bean sprouts!
