che restaurant brings the gaucho flavors of argentina, hot off the grill to pearce, az. a fresh menu each month, locally sourced and organic, as available.
the hotel was built on sacred apache ground, the home of cochise the famous apache indian chief who protected his land with bloodshed. in 1899, big nose kate, the famed sidekick of doc holliday, was hired to work in the hotel after holliday's death.
the original adobe structure was started in 1896 by john rath, a 28 year old entrepreneur and railroad telegrapher (his spirit has been felt around the hotel). he dug a well and made an agreement to sell water to the railroad, which prompted them to build a full on station at the camp. rath’s hotel quickly became a hub for the area. it served as the wells fargo express office, telegraph office, local post office, community laundry, and hotel/ restaurant.
the station was named cochise, after the apache warrior. cochise station consisted of railroad cars to house the workers with no amenities. the railroad employed mostly irish and chinese. spirits of some of these characters visit the old cochise hotel from time to time.
