⠀ ✅ Chicken or Veggie Stock: hydration and packed with lots of vitamins, minerals and is a decongestant when it’s consumed hot⠀
✅ Chicken Soup: protein, lots of healing qualities due to its high cysteine content, known to be anti-viral and anti-inflammatory and packed with antioxidants⠀
✅ Garlic: antibacterial, anti-fungal and great for boosting immunity⠀

Chicken Noodle Soup--for the soul.

A hearty healthy winter soup that fills you up and keeps you warm, this chicken noodle soup is purely for the soul.
Make it with any type of noodle you fancy. I personally love flat noodles or bean noodles. Use any vegetable you love e.g brocolli, cauliflower, carrots, beans, chard, tofu.

Method:
Add a little oil in a saucepan, saute 1 tsp each ginger and garlic paste with 3 sliced de seeded birds eye chillies and add 1 medium cubed onion. Mix well. 
Now add 200 grams of any boneless chicken type, breast/ thigh or mixed previously seasoned with salt/pepper. Stir fry for 5 mins.
Add 2 tbsp chopped celery, 1 cup sliced carrot. Cover and cook for 2 minutes. Add 1 cup sliced cabbage, 1/2 cup any color bell pepper. Mix well.
Now add in 2 tbsp each of light soya sauce, dark soya sauce, oyster sauce and rice vinegar to your liking (I like it a bit sour) adjust all sauces to your desired taste.
Now add previously soaked rice sticks for 10 mins, into this mixture and saute well.
Add a handful of bok choy with  stalks OR spinach with stalks. Mix well.
Lastly mix 3 cups of chicken broth/stock.
Give it a boil. Garnish with sliced spring onions, coriander, fried garlic chips,basil leaves, roasted sesame.
