PUMPKIN PASTA 🎃 ok but like for REAL this tastes incredible 😍 haven't really cooked for myself & have been letting the self care (such as laundry, sleep, etc.) fall to the wayside. Which has been totally ok! But today I knew I needed to take some time and get my life in order. Did a load of laundry, showered, and made this BOMB lunch and packed some for work this week. Gonna be looking forward to lunch tomorrow for SURE. 🤤

Recipe adapted from @showmetheyummy 🙌 thanks girl! Legit could not taste better.

Here's how:
1️⃣sauté a yellow onion and a package of chopped up @alfrescogourmet apple chicken sausage 🍎
2️⃣roast some veggies (I used mushrooms and brussels) 🍄
3️⃣once the onions are soft, add:
•3/4 cup milk of choice (I used cow's milk 🐮)
•a can of pumpkin 🎃
•3 1/2 cups broth (I used @zoupfreshsoup chicken broth)
4️⃣stir and add:
•4 cloves minced garlic
•pasta of choice (a used fusilli)
•cinnamon
•cayenne (just a tiny bit!)
•salt
•pepper
5️⃣bring to a simmer and keep simmering till the broth evaporates and the pasta is almost done. Remove from heat 🔥
6️⃣fold in:
•spinach 🍃
•a cup of white cheddar cheese 🧀
•1/4 cup parmesan
7️⃣SERVE! And travel to cozy, creamy fall heaven 🍂

What a day; what a weekend! It's been wonderful but absolutely exhausting. I think my legs are going to fall off from all of this walking! Thick, whole grain fiberous fuel certainly needed.
This sticky Scott's porridge was my breakfast this morning. 
But now I'm tucked up in my fluffy dressing gown with a warm creamy bowl topped with simply cinnamon to wind down after such a brilliantly busy couple of days.

What a day; what a weekend! it's been wonderful but absolutely exhausting. i think my legs are going to fall off from all of this walking! thick, whole grain fiberous fuel certainly needed. this sticky scott's porridge was my breakfast this morning. but now i'm tucked up in my fluffy dressing gown with a warm creamy bowl topped with simply cinnamon to wind down after such a brilliantly busy couple of days. g'nite oatling lovelies x

TORTITAS ESTILO MORUNO 😋

INGREDIENTES ⁉️
🔹40 gr copos de avena sin gluten.
🔹80 gr leche de almendras.
🔹1 huevo + 120 gr claras (4 claras).
🔹Especies en cantidades al gusto: canela, nuez moscada, anís  y jengibre. .
CÓMO SE HACEN⁉️
1️⃣ Batir bien todos los ingredientes.
2️⃣ Engrasar una sartén con aceite de coco y verter la mezcla hasta hacer unas 5 tortitas.
3️⃣ Agregar toppings si lo deseas, en mi caso : dátiles y plátano 🍌.
