The other day, i saw a question asked in a group i'm a part of. someone wanted to know if it was possible to make healthy meals in a slow cooker. at first this baffled me. seemed like common sense to me. but when i really thought about it, i remembered that my mom always made casserole type dishes in her slow cooker. there was always a can of "cream of whatever" added in.

though! i can make large quantities of meat at once, and it comes out tender everytime with nothing more than a little water added to the cooking process.
today, i made pulled pork carnitas in my slow cooker. i rubbed a pork shoulder with cumin, oregano, onion powder, smoked paprika, and garlic and seared it a hot skillet just to brown the outside it. then i transferred it to my slow cooker with 1/2 cup of water. it slow cooked all day while i ran errands, did laundry, and went to the gym. tonight, i used 2 forks and shredded it.
we made burrito bowls for dinner tonight, but there is plenty leftover to add to my meal prep menu for this week. i have enough for another night of burrito bowls. i will also have some for lunch this week. one day, i will use some of this pork topped on a sweet potato and another day i'll have just the pork with a side of steamed broccoli.
another tidbit, i always use plain yogurt in place of sour cream.
