Greek Lemon Chicken & Orzo Soup

This lemon orzo soup is bright and lively. Poaching chicken in store-bought broth is an easy way to enrich the soup and provide an extra depth of flavor.

Serves 4

INGREDIENTS 
1 cup whole-wheat orzo
1 TBS olive oil
1 ⅓ cups diced carrots (1 large)
1 ⅓ cups diced fennel bulb (1 medium bulb)
1 ⅓ cups diced onion (1 medium)
1 TBS minced garlic 
1 ½ tsp dried oregano
1 tsp grated lemon zest
1 lb boneless, skinless chicken breast
1 32-oz. carton low-sodium chicken broth 
2 TBS lemon juice
1 TBS minced fresh dill
¾ tsp salt
½ tsp ground pepper

DIRECTIONS 
Step 1
Cook orzo according to package instructions; drain and set aside.

Step 2
Meanwhile, heat oil in a large pot over medium heat. Add carrots, fennel, and onion; cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add oregano and lemon zest; cook for 30 seconds.

Step 3
Add chicken and broth. Bring to a boil, then reduce heat to a maintain a simmer. Cook until an instant-read thermometer inserted in the thickest part of the chicken registers 165 degrees F, 10 to 12 minutes. Remove from heat; transfer the chicken to a plate to cool slightly. When cool enough to handle, shred or chop the chicken and return it to the soup. Stir in the cooked orzo, along with lemon juice, dill, salt, and pepper.

This week I’ve been inundated with DMs from you lovely lot saying similar things like.... ‘How are you so motivated to keep fit’ ‘how are you still working out while things are like this’ etc

Well, to be completely honest, it’s getting me through. We’re in really uncertain times, jobs and finances are at risk and stretched & we can’t see anyone we don’t live with. If I can’t maintain exercise while in this. I’d loose my head. And I say that as someone that is already battling anxiety even with the routine of working out each day. I can’t even imagine how I’d feel with out that kick of energy and burst of endorphins. I also have @life_the_fitness_co to thank for helping keep me on it. He knows more than anyone how my brain can be cruel and how keeping active physically, keeps me going mentally (pt or therapist, maybe both?) For me, working out, makeup on, are the two ways I can switch off.

When you’re going through a sweaty hiit session you aren’t thinking about much else, when you’re concentrating on the perfect winged liner, you can only focus on that.

So really, it’s my coping mechanism.

It also keeps some level of routine and normal in this new normal we’re in right now.

So I’m not saying a work out will be your perfect coping mechanism. But I am saying, if you are struggling. Have a think about what you enjoy. What makes you concentrate. Is it organising? Is it knitting? Yoga? Reading? Find what works for you.
Then do it, consistently. And that’s key. Consistency is key. Routine is the one.

If you’re work days are super stressful. Book yourself into your own calendar something you enjoy the moment the day finishes. Or start your day right with a dance round your bedroom in your pants to your favourite 3 songs. Anything to take you mind off things, focus you and make you feel good.

How was this only 2 weeks ago!? It’s been a hectic week.. I’d be lying if I said I was grieving right now. Grieving all the big plans I had for the next 6 months. BUT after taking the week to process, assess and adapt I’m in a much better headspace. My advise for everyone who has lost their job is to set yourself a daily routine. Tomorrow I will be setting an alarm, doing some gentle exercise and beginning my work day. I may not be training clients f2f but the work hasn’t ended and we all still have goals to work towards. For the first time in a long time I’ve had TIME to let my creative side out & my mind has been in overdrive working on solutions and future plans. My biggest lesson that I’ve learnt over the last 12 months is that things rarely go to plan, things come up, people & situations will always arise to try and throw you off track. You’ll fuck up & make mistakes probably more than once. So how do we keep moving forward? We get really good at adapting. There is always a solution it may not be ideal but it’s not about being perfect it’s about moving forward. So if you haven’t already this is your Sunday reminder to set your intention for the week. Write a list of things you are going to achieve this week and adapt to your new routine. Time to embrace a new reality it’s hard, it’s scary but it’s not forever. 💖

How was this only 2 weeks ago!? it’s been a hectic week.. i’d be lying if i said i was grieving right now. grieving all the big plans i had for the next 6 months. but after taking the week to process, assess and adapt i’m in a much better headspace. my advise for everyone who has lost their job is to set yourself a daily routine. tomorrow i will be setting an alarm, doing some gentle exercise and beginning my work day. i may not be training clients f2f but the work hasn’t ended and we all still have goals to work towards. for the first time in a long time i’ve had time to let my creative side out & my mind has been in overdrive working on solutions and future plans. my biggest lesson that i’ve learnt over the last 12 months is that things rarely go to plan, things come up, people & situations will always arise to try and throw you off track. you’ll f**k up & make mistakes probably more than once. so how do we keep moving forward? we get really good at adapting. there is always a solution it may not be ideal but it’s not about being perfect it’s about moving forward. so if you haven’t already this is your sunday reminder to set your intention for the week. write a list of things you are going to achieve this week and adapt to your new routine. time to embrace a new reality it’s hard, it’s scary but it’s not forever. 💖

You may not have a cool set of ropes in your yard like I do but you can still train back.. Generally speaking any type of pulling motion will train your back. 
If you have no gym equipment put two chairs next to each other and sit a broom handle over them from there you can do Inverted rows (or body rows as some call them). If you have resistance bands wrap one around a pole or your feet and pull towards your belly button.

Failing that fill a bucket/water container/Jerry can and do one arm rows with them

I’ve had these Tarpon Bay knives for over 20 years now. They were gifted to me from my old brother-in-law Tommy. Sadly he’s passed away but these knives remind me of him and have served me well. The two of us would spend hours at the campsite throwing knives competing against each other. They are supposed to be used as diving knives but they kick ass as throwing knives too. So a long random post...my apologies in advance.

I have once again fallen out of a healthy routine. I was doing pretty well for 3 weeks after the new year, then went on a family holiday to Phuket, came back and lost all sense of reality with distance learning being my main focus. My sleep has been awful...averaging about 4-5 hours a night until this week. Now I am finally feeling somewhat rested, it is time to tackle a new wellbeing goal - exercise. Regular exercise.

I unfortunately have gotten into an incredibly bad habit of sitting and not moving much at all during the distance learning period. It has made me realise that as teachers, we naturally do move quite a bit. Without daily movement, I feel the weight piling on even faster and I am just really tired all the time!

As you will see in the background, I do have a little treadmill, a step and I also have some light weights and resistance/recovery bands so there is NO excuse for not moving my body. Starting tomm, you will see posts about my exercise of the day. I figure some is better than none.

This has been my work space for the last 8 weeks. Teaching online has been a huge learning curve but the kids have been absolutely amazing! I am SO impressed with how hard they have been working through all of this!  Now everyone seems to be in a routine, it's time to start looking after me. So a long random post...my apologies in advance.

Tried out the mic > toad sequence. Tricky one, requires good timing to pull it off.
