Baked Banana Fritter Spring Rolls by @missmarzipancom 🧡

Makes 12

INGREDIENTS

1 large banana, sliced
75 ml walnuts, crushed (optional)
3-4 tbsp sesame seeds (optional)
6 sheets dairy-free filo pastry
50 ml olive oil or melted coconut oil
Maple syrup & vegan vanilla ice-cream of choice (we prefer oat-based) for serving

DIRECTIONS

Heat oven to 180°C fan/360F.
Place one sheet of filo on a clean surface. Brush the entire sheet lightly with oil and place a second sheet over it. Pat across the surface lightly with your hands to smooth out.
Cut the double filo sheet in quarters, widthways.
Lightly brush the sides of each pastry strip with a little oil.
At the top of each strip of pastry, add 3-4 slices of banana and a sprinkle of crushed walnuts if using.
Roll the top section over the once, then fold the sides in too, before continuing to roll all the way down, creating a secure filled pastry parcel. Repeat the process.
Place all the spring rolls on a baking paper lined tray, leaving a little space in between each one. Brush each roll lightly with oil. You can sprinkle the sesame seed on at this point, or you can toast them lightly and serve them on the side as an optional “sprinkle”.
Bake for 20 mins until golden and crispy.
Serve warm, preferably with ice-cream and syrup. #bestofvegan

For this easy basil pesto you'll need:
•2 1/2 handful fresh basil leaves
•1/2 cup pine nuts (you can also use walnuts or cashew nuts)
•1 big clove of garlic, peeled(or more if you like it garlicky)
•3 tbsp. water
•2-3 tbsp. Nutritional yeast
•1/2 tsp. salt (+more to taste)
•1/3 cup extra virgin olive oil
.
Makes enough for 4 portions (ca 400g pasta)
.
Add all the ingredients, except the olive oil, to a food processor
Blend until everything is finely chopped
Then, add the olive oil and blend again until everything is well combined and smooth
Add more salt if needed and if you desire a runnier texture, feel free to add a bit more olive oil or water

VEGAN Orange 🍊 Cake w/ Coconut Orange 🍊 Icing

Gluten-free, refined sugar-free, and definitely wholesome. This is a dense and decadent cake, with a yummy orange punch. 🍊Make it with or without the frosting, in a cake dish or a loaf pan. Recipe👇🏼below

FOR THE CAKE
1/4 cup melted coconut, olive or avocado oil 
1/4 cup freshly squeezed orange juice 
2/3 cup unsweetened plant-based milk
zest of 1 and 1/2 organic oranges 
1 teaspoon vanilla extract
8 tablespoons maple syrup 
1 1/4 cup ground almonds - I whizzed whole almonds in my Vitamix
1 1/4 cup gluten free oat flour 
2 teaspoons baking power 
1/4 teaspoon baking soda
.
Preheat oven to 350 F
Mix oil, orange juice, plant milk, orange zest, vanilla, maple syrup and ground almonds in a bowl
Sift in the oat flour, baking powder and baking soda
Mix well, and add a touch more milk if it looks too dry 
Transfer mixture to greased baking dish or loaf pan. (I used a 9 inch round cake pan.)
Bake in oven for around 30-40 minutes until risen. Then, insert a skewer and check to see if it come out clean. If it doesn’t, let it bake some more, checking periodically. Dependent on your stove and dish, bake times will slightly vary. Keep a close eye!
Once done, transfer cake onto wire rack and leave to cool completely for about an hour. 
Frost and place cake in the fridge for 30 minutes, so the coconut frosting can slightly harden. 
Enjoy and store in the fridge if you manage not to eat it all

FOR THE FROSTING
1 can full fat coconut milk, refrigerated overnight
1 1/2 tbsp maple syrup 
1/2 tsp vanilla
2 tbsp orange zest
2-3 drops essential orange oil instead of zest (optional)
.
Scoop out cream on top of chilled coconut milk can and place in a small mason jar.
Add maple syrup, orange zest, (orange oil), and vanilla to cream.
Shake like mad for 3-5 minutes. 
If frosting looks too runny, place jar in fridge for a few minutes to stiffen up. 
Add frosting to the cake and place cake in fridge for 30 minutes to set.
Enjoy!

That chocolate pour! 😍🍫 if you missed it - i posted this new fudgy veggie-packed "healthy" brownie recipe yesterday 🤗✨ you wouldn't guess, but it has sweet potato, zucchini, and beetroot in it! 🍃🍠 i'm super happy with how it turned out - i've copied in the recipe below + you can also find it on my website✌🏻 hope you enjoy and please let me know if you have any questions! ash x

ingredients

brownie
130g coconut oil, softened or melted & cooled
2 cups coconut sugar -or- 1½ cups if don’t mind it less sweet
1 tbs vanilla paste or extract
2 large eggs
200g raw sweet potato, finely grated
150g raw zucchini, finely grated
100g raw beetroot, finely grated
1 cup almond meal
¼ cup buckwheat flour
1 tsp baking powder
1 tsp flaked sea salt
1 cup raw cacao powder
½ cup dark & rich dutch processed cocoa powder
¾ cup thick cultured coconut yoghurt -or- thick greek yoghurt
extra cocoa powder for dusting

chocolate ganache (optional)
200g dark chocolate, roughly chopped
¾ cup coconut cream
3 tbs coconut oil
1 tsp vanilla
pinch sea salt

toppings (optional)
veggie chips
cacao nibs
freeze dried strawberries

method

brownie
preheat your oven to 180c/350f.
whisk the coconut oil and sugar until combined.
add the eggs and vanilla and whisk for 2-3 minutes.
add the grated veggies and fold through.
next, add the dry ingredients and stir to combine.
fold through the yoghurt.
line a 20cm brownie pan with baking paper.
pour the brownie mixture into the pan smoothing it out with a spatula or spoon.
bake at 180c/350f for 30 minutes.
remove from the oven and set aside to cool.
once cool, remove the brownie from the pan, cut into pieces, and dust with cocoa powder and top with desired toppings -or- top with the ganache and place in the fridge for about 30 minutes to set - then cut into pieces.
store in an airtight container in the fridge. enjoy! x

chocolate ganache (optional)
place all ingredients into a medium sized saucepan and melt over low heat.
