Return of my air fryer low carb bbq meatloaf! this time i doubled the recipe (below) & baked it in an 8x8 dish in the oven. still turned out amazing. i seriously still get a few messages a week (even tho it’s been a while since i posted about it) from people telling me they made it & the whole family loved it - even picky kids!
recipe for meatloaf:
1 lb 85/15 ground beef (i used grass-fed organic because i found some on sale)
2 tbsp heavy cream
1/4 c. onion (grated or chopped super tiny)
2 tbsp low sugar bbq sauce (i used @alternasweets
plus a splash of worcestershire sauce)
2/3 cup @porkkinggood
crushed pork rinds
1/3 cup grated parmesan cheese (the powdery kind)
1 tsp parsley
1/2 tsp pink salt
1/2 tsp garlic powder
1/4 tsp ground black pepper
recipe for the glaze:
1/4 cup @alternasweets
ketchup (or other reduced sugar ketchup)
2 tbsp @swerve
brown sugar substitute
1 tbsp red wine vinegar
combine all ingredients for the meatloaf in a bowl & mix really well (if you don’t mix it enough it will be too moist/crumbly & not hold together).
in a separate bowl, mix all ingredients for the glaze.
this time i pressed the prepared meatloaf mixture into greased 8x8 pan, then baked at 375° for 30 minutes. took it out, spread the glaze over the top of the meatloaf, then continued to cook for another 25ish minutes until done.
this recipe was originally based on a recipe from @the_wholesome_dish, which i thought looked good- then i adapted several things to make it low carb, and i usually make it in the air fryer instead of the oven.
also, the glaze? so much better than just regular ketchup! i’ll never use regular ketchup on meatloaf again.
