these brownies are difficult to describe. they are too fluffy to be a true brownie but too dense to be called a cake. i ate piece after piece trying to decipher their secrets but all i know for sure is that i liked them even more than i expected. they possess a fudgy texture that accentuates the crunch of the cookies and puts you at risk of eating an entire pan.
7 oz dark chocolate, chopped
5 1/2 oz (11 tbsp) unsalted butter
3/4 c brown sugar
2 egg yolks
2 tbsp flour
1 tbsp cocoa powder
13 oreo cookies, quartered
in a saucepan, melt the butter then add the chocolate. let sit until the chocolate softens then stir until smooth. combine the eggs, egg yolks, and vanilla in a stand mixer. whip until the mixture becomes light and frothy. add the sugar in two additions whisking between each, taking care to pour the sugar around the edges of the bowl so as not to knock the air out of the mixture. keep whisking until the mixture becomes stiffer. then pour the chocolate into the batter, still taking care not to knock the air out of the batter. mix until well combined then add the flour and cocoa. stir until the batter is fully incorporated then fold in 1/3 of the oreo's. pour the batter into a greased 9 x 13 inch pan then top with remaining cookies, gently pressing them into the dough. if there aren't enough cookies on top for your liking, feel free to add some more. bake at 350 degrees for 25-30 minutes, removing when the middle is very slightly gooey.
