Chickpea fritters over a big chopped salad is one of my favorite meals ever (okay, and both recipes are from the essential vegetable cookbook!) .
a lot of you have been cooking from the book (yay 🎉) and are probably noticing that the recipes are definitely not gourmet recipes - they’re all easy, time saving recipes to help make balanced and delicious meals quickly (by using pre-minced garlic vs. mincing it yourself, or pre-shredded cheese, etc.). in fact, the recipes are so easy that the book was originally called the *easy* vegetable cookbook (and changed once we realized how much important info the book contained)!! my goal with this book was to help get anyone started in the kitchen and eating more veggies, in the least intimidating way possible. so far, you guys are seriously crushing the recipes and i’m absolutely loving seeing it! 👊🏻✨💛
