I am currently at home with my partner working from our home offices most of the time, luckily everyone has his own room. ⠀
In between there are alternate soul food meals, alternating with fresh vegetables until they are used up again. Here is a slow cooked carrot soup with coconut milk 🥕⠀

VEGAN BROCCOLI CHEDDAR SOUP! 🥦⠀

Ingredients⠀
4 cups broccoli florets⠀
1 onion, chopped⠀
2 cups almond milk or any unsweetened plain plant milk⠀
3 cups filtered water⠀
1 1/2 tbsp “Not chicken” bouillon⠀
1 cup celery,chopped⠀
1 cup carrot, chopped⠀
1-2 golden potatoes, chopped⠀
1/2 tsp black pepper⠀
CHEDDAR CHEESE SAUCE⠀
Juice of 1 lemon⠀
1/2 cup raw cashews (soaked for 20 minutes in hot water)⠀
1 cup carrot, chopped⠀
1 cup potato, chopped⠀
1 cup unsweetened almond milk⠀
1/2 cup water⠀
1 tsp salt⠀
1/2 tsp pepper⠀
1/2 tbsp garlic powder⠀
1/4 cup nutritional yeast⠀

Instructions :⠀
1. Soak raw cashews in hot water for 20 minutes. (Discard water and add into cheese sauce later⠀

3.Pour almond milk, two cups of filtered water and 1 1/2 tbsp “not chicken” bouillon. Whisk together until bouillon is dissolved. Bring to a simmer for about 5 minutes. Add potatoes and carrots cook for 10 minutes then add broccoli and celery; simmer until all the vegetables are tender, about 15 minutes.⠀
6. Meanwhile make “cheddar sauce”. In a large pot bring 4 cups of water to a boil. Add copped potatoes and carrots to the pot and let cook for 15 minutes or until tender.⠀
7. Once potatoes and carrots are cooked, Drain the potatoes and carrots (discard the water) and place all your cheddar sauce ingredients into a high-speed blender or food processor and blend until smooth. Pour the sauce into the pot and stir to combine. Simmer for 5 minutes and then serve hot! Enjoy.

Lunch is served 🥳 this bowl took me 10 minutes to make thanks to left over quinoa, left over tahini dressing and precooked chickpeas! All I had to do was roast chickpeas and tofu, chop bell pepper and wash baby spinach. Place it all in a bowl et voilà😊. Cooking in batch is probably my best tip for eating healthy. Lunch is served 🥳 this bowl took me 10 minutes to make thanks to left over quinoa, left over tahini dressing and precooked chickpeas! all i had to do was roast chickpeas and tofu, chop bell pepper and wash baby spinach. place it all in a bowl et voilà😊. cooking in batch is probably my best tip for eating healthy. being prepared helps a lot! hope you’re having a great day so far! xx

it’s fritter time! 🥳 i tried these yesterday for the first time and they were so scrumptiously simple that i had to share them with you as soon as possible! 🧆 the original batch was just zucchini, potato, and onion, but i added the bell pepper and kale today and they turned out just as delightful! 🌱 feel free to try other veg, fresh herbs, or just stick to the basics- these fritters are very customisable! 😊

potato & zucchini fritters (makes 8-10 fritters)

1 zucchini
2 smallish potatoes (approx. 150-175g total)
1 small onion
1/4 cup diced red bell pepper
1/4 cup shredded kale
1/2 cup gluten-free flour (or regular)
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp mixed herb blend
pepper to taste

1. rinse zucchini and grate into a mixing bowl. peel and grate potatoes and onion into the same bowl, then drain as much excess liquid as possible by pressing mixture into a fine sieve or straining through a cheesecloth or clean tea towel. 
2. finely dice red bell pepper, chop or shred kale, and add both to the mixture.
3. Add salt, pepper, garlic powder, herbs, and flour, and mix together until well incorporated. 
4. roll mixture into balls and flatten into 2-3 inch patties. if the mixture is too wet and doesn’t hold together, add more flour a little at a time until it reaches a better patty-forming consistency. 
5. fill a frying pan with vegetable oil at least 1/2-inch deep. cook fritters on medium to medium high (make sure oil is HOT before adding the fritters to the pan or they will just absorb the oil) for about 3-4 minutes each side, turning once or twice until golden brown and crispy on both sides. if fritters are browning too quickly reduce heat a little.
6. once cooked, remove from pan, sprinkle with a little extra sea salt and allow to cool for a minute or two before digging in!
7. these fritters taste best when hot and crispy, so reheat leftovers in a non-stick pan- with or without a little oil- before eating.

Todays dinner turned into a little bit of, 'what else in the fridge needs eating'. Sometimes those kind of days end in the tastiest meals 🥦
.
180g risotto rice
100ml white wine
1 pint stock
1 leek
1 clove of garlic
1 handful of frozen peas
1/2 tsp oregano
Parmesan
Chilli flakes
Purple sprouting broccoli
2 slices thick cut ham
. 
Cook chopped leeks, garlic and oregano on a low heat, with a knob of butter, until soft. Add risotto rice, and wine, and cook until the wine has gone. Add stock a ladle at a time, until rice is al dente. Add frozen peas for final few minutes, and Parmesan to finish.

Fry cut up ham in a little oil until crisp.

Roast purple sprouting broccoli, with a glug of olive oil and chilli flakes, for 20 mins at 180°.

This is super easy, especially during this crazy time when you might not have a ton of fresh stuff in your fridge. I put the pitas in the oven to warm them a bit first- about 8 min on 400.. then I pulled them out and assembled them. Sauce, cheese, and a little olive oil on top. Cole only wanted cheese, so not really pizza, but.. toddlers 🤷🏻‍♀️
For the sauce, drain your diced tomatoes so it’s just the chunks of tomato. Blend them in your vitamix on low with the herbs and some salt and pepper. I say this a lot on here but this was literally one of the nicest things I’ve eaten in ages! This sweet potato, chickpea and peanut butter stew from @plantbasedrd was incredible! I had to make a few substitutions with what I had in the cupboards, but it didn’t affect the flavour at all and at the minute, we have to make substitutions where needed, with the supermarket shops being less frequent. I served it with pearl cous cous and garnished with some little bits of parsley off a plant that has somehow made it through winter in my garden! Oh and the kids loved it! My youngest even asked if we could have it again tomorrow! Result! 😁😋

I used no-salt added canned black beans and simply rinse them right before adding it to my salad. Canned black beans are super convenient and are loaded with fibre and protein, so helps to keep you satiated for longer. I served leftover oven baked potatoes on the side (not pictured), so you can definitely add a starch (i.e grains or sweet potatoes) to this salad to help you feel more satiated!

Dressing: •1/4 cup Greek yogurt •1 clove crushed garlic •1 lime •1/4 cup olive oil • 2 tbsp white wine vinegar •salt and pepper .
Directions:
1) In a bowl combine kale, cherry tomatoes, red pepper, red onions, cilantro, avocado, black beans and feta cheese.
2) Mix in dressing and top off with any additional toppings as desired (nuts/seeds).

Did not write down the cracker recipe, but approximately: soak 1/4 cup golden flax in a cup of cabbage/celery juice for several hours (or overnight), add 2 T golden flax meal, 2 T soaked chia, 1/4 cup green onions, 1/4 cup chopped colored bell peppers, 1 tsp turmeric, 1/4 tsp black pepper, dash cayenne, 1 tsp garlic flakes, 1 tsp dried oregano, 2 T lime juice. In food processor, grind a cup almonds (soaked overnight, which increases volume to about two cups), add the flax mixture and blend until combined. Will be thick and spreadable for dehydration. When making flax crackers, I always like to soak the flax in vegetable juice, as it gives more flavor and color than soaking in water. Purple cabbage makes dramatic purple crackers, carrot juice is nice too.  I include proportions here more as a guideline - crackers are adaptable, and I often use sunflower seeds instead of almonds. Walnuts make a nice base, too. There are plenty of recipes online. I find that Excalibur dehydrators work much better for crackers than the round kind, as they distribute heat more evenly.

I hope some have been seeing past fear and perhaps recognize how productive this time in the nation might be. I wonder optimistically how many people are changing their lives in big ways because they are digging into to themselves. Reflecting. Asking important questions. Usually there’s just so much distraction, and we might go thru stress, anxiety, etc. but we don’t really think about why we feel those things. We don’t really pray. I personally think the best prayer is meditation. It’s pure surrender, pure connection to stillness and the love deep inside all of us. Read the book The Universe Has Your Back. It’s incredible. Much love, stay healthy, exercise, do some yoga, have a routine, put on your shoes. Stay positive. Find some stillness☀️

Kung Pao Brussel Sprouts 🤤

This is so yummy and so easy to make, I stumbled across this recipes on the @delish blog and made some adjustments to create a smaller serving and a sweeter kung pao sauce 🥣 - 12 brussel sprouts, halved. Pre-heat over to 425, toss brussel sprouts with olive oil and season with onion powder, salt, and pepper.
- Bake for about 20 minutes and remove from oven.
- To create sauce: add 2 tbsp of garlic and 1/4 onion (diced), 1/2 green bell pepper (cubed), and 4 mushrooms (sliced) to skillet on medium heat with EVOO and cook until fragrant, about 2-3 minutes.
- Add 1 tbsp corn starch, 1/2 c low sodium soy sauce, 1/2 c water, 2 tbsp agave, 1 tbsp brown sugar, 2 tsp garlic chili sauce and 2 tsp of apple cider vinegar. Bring skillet to medium-high heat to a boil, then reduce heat and simmer until sauce has thickened.
- I served my brussel spouts over 1/3 c rice and topped with sauce and veggies, sesame seeds, a sprinkle of red pepper flakes and diced green onions.

3 ripe bananas, sliced and frozen
1 teaspoon pure vanilla extract
½ cup @califiafarms cold brew
¼ cup unsweetened cocoa powder
Chocolate chunks, for serving
INSTRUCTIONS
1. Add bananas, vanilla extract and cold brew to a blender or food processor. Blend until smooth and creamy, scraping down the sides of the blender as necessary.
2. After a few minutes of blending, add the cocoa powder and blend until it’s well incorporated, scraping down the sides of the blender as necessary.
3. Pour into a freezer-friendly airtight container and freeze for 4-6 hours until the mixture is solid. Allow the ice cream to thaw for a 5-10 minutes before scooping.

i know a lot of pregnant women are scared right now with all of the unknowns during this time. but fortunately, there are glimmers of good & comforting news. “it seems most children are not affected [by the new virus], and those who are affected seem to have mild disease.” .

many hospitals, in an effort to prevent the spread of the virus to staff or other patients, have reportedly prohibited all visitors, even including a pregnant woman’s partner, but women preparing to give birth at some hospitals in new york city will no longer have to labor alone, fortunately. 🤞keeping my fingers crossed that most of us will be able to have our partners or a loved one with us during labor 🤞 .

Tofu never screams... I know that sounds simplistic, and ridiculous, but hear me out. 
I spent most of my life consuming animals disguised as products from industries that want to hide the screams of these animals from consumers. This action is deliberate, because they know if customers heard what happens behind slaughterhouse walls, that most consumers would stop buying their dead animals. 
Through my journey I've come to accept the fact that animals are not products, and they certainly are not food. They deserve better, and I've since aligned my actions with my morals. When I say that I love animals, I can say that I love animals, not only certain species. You can't say you love animals and eat them too. Those two actions cannot correlate. Just as a husband can't say he loves his wife, if he's mentally or physically abusive to her. Maybe that will resonate with someone to understand what I'm trying to say. 
I hope you'll join me, in reducing, and eliminating animal cruelty from your life. Obviously when people talk about veganism, diet is the first thing that comes to mind. However it's seriously the tip of the iceberg. Everything from clothing, cosmetics, personal care products, entertainment, and more are packed full of animal cruelty. It might not be directly from animal products or by products, but could be animal testing is something that so many don't often think about. Again, it's out of sight, it's out of mind.

Cooked the mushrooms in coconut oil and when they were done I added the kale and broccoli. Seasoned it with sesame oil, plenty of ginger, tamari soy, rice vinegar, and sambal oelek. Nori flakes sprinkled on top.

Hi Friends. How are you doing? Hanging in there? I’m physically good (= healthy and safe), but the emotional exhaustion is really starting to set in. But I’m still over here cooking and baking away. The kitchen has always been a safe space for me. So that’s where I plan to stay. This Roasted Strawberry and Asparagus Spinach Salad with Tahini Dressing is NEW on the blog today. These tofu tacos 🤩🤩🤩 I mean I honestly was not expecting these to turn out so good, but let me tell ya, I didn’t miss the meat at allll! The flavors were soo good, and this is a really healthy option or just a different recipe to switch things up 💃🏻 recipe dEATS 👇🏼

For the tofu mixture: whisk together 1 Tbsp evoo, 1 Tbsp soy sauce, 1 tsp chili powder, 1 tsp ground cumin, and 1/2 tsp garlic powder. Crumble 1 block of extra firm tofu and mix until the tofu is evenly coated. Heat 1 Tbsp evoo in an ovenproof skillet and add the tofu crumbles. Cook until the tofu is dry and the moisture cooked off. Add 1/2 can black beans and 1/2 cup salsa. Cook for an additional 2-3 minutes. Transfer the skillet to the oven and broil on high for 4 minutes. Remove from oven, mix, and broil for another 4 minutes. Remove from the oven and they’re ready to serve with your fav toppings! Recipe for tofu mixture from @wellplated

We call this the Park City Salad in our house because I came across it when we were snowboarding in Park City, Utah last winter. For lunch we stopped at one of the restaurants on the peaks. Finding good vegetarian options in Dallas is hard enough, let alone thousands of feet in the air. So when I saw this salad on the menu I was blown away! I meant to take a photo of the ingredients on the menu before we left so I could recreate it, but I forgot so I had to do it as best as I could from my memory. 
You can roast the sweet potatoes with skin or off. Don’t skip the caramelized onion part - the sweetness really ties everything together.

Hey everyone! I hope you all are safe and healthy, things have really escalated with covid-19 since the last time I posted on here... I know it can be really difficult to maintain a healthy lifestyle when you are stuck at home, stressed about the virus, and maybe you even have a family member or friend that’s sick, but I highly encourage you to find creative outlets.

Do things that you don’t usually have time to do, cook something new, start a new movie or tv show, read a book, get the canvas that’s been sitting in your basement and start painting! With all the negative energy going around, it’s super important to take care of your mind and body 🙏🏼 At school I was struggling with digestive issues, so I’ve been I’ve focusing on cooking simple nourishing meals, eating slowly, and eating until I’m satiated. So far I haven’t had any problems, which just proves to me that I should be cooking my own food more often because it’s what makes me feel best!

I have also been trying to stay away from processed foods, even “healthy” processed foods because they have so much sodium, which causes water retention and bloating and makes me feel gross (I’m looking at you, Trader Joe’s cauliflower gnocchi 💔). Here are a few of my go-to meals right now. Tacos, vegan hummus sandwiches, and if you want to get creative, pizza:) I hope this helps inspire you to nourish yourself during the quarantine, and remember that you don’t have to spend hours in the kitchen; simple meals can be healthy and delicious! #plantfullypure
