It might be winter but weโ€™re sure youโ€™ll still want this โ€˜Summer Watermelon Salad with a Spicy Twistโ€™ by @camillestyles ๐Ÿ‰

Ingredients:
.
for the salad:
.
+ 1 box of greens of choice
+ 1/2 cantaloupe, sliced
+ 1/2 honeydew melon, sliced
+ 1/4 large watermelon, cubed
+ a handful of chopped mint
+ 8oz of paneer, cut into slices
+ 1 tbsp olive oil
+ 1 1/2 tsp chaat masala
+ salt to taste
.
for the dressing:
.
+ juice of 1 1/2 lemons
+ 1/2 tbsp honey
+ 1 bunch of mint
+ salt and pepper to taste
.
Steps:
.
1) to a large salad plate or bowl, add the greens, melons, and chopped mint, and toss together. set aside.
.
2) bring a grill pan up to a medium-high heat.
.
3) in a small mixing bowl, add the sliced paneer, olive oil, chaat masala, and a pinch of salt. toss together until the paneer is evenly coated.
.
4) lay the paneer slices onto the grill and cook for about 2 โ€“ 3 minutes on each side until you get golden grill marks on the paneer.
.
5) remove paneer from the grill pan and toss into the salad bowl.
.
6) to make the dressing, add all of the ingredients into a small blender and blend until smooth. drizzle over salad and toss together. enjoy!

CONFESSION TIME: my diet the last 2 weeks has consisted of far too many processed meats & carbs/sugar ๐Ÿ˜‘ & to be honest...Iโ€™m traveling again the next 2 weeks & donโ€™t foresee it getting a whole lot better ๐Ÿคท๐Ÿผโ€โ™€๏ธ

A quick easy lunch for today and for work tomorrow ๐Ÿ˜‹
.
We got the garbanzo based pasta, Banza, which is my go-to! Picked up this vegan pesto from sprouts because I was too lazy to make my own hehe (and it was pretty good!)
Added in some tofu and sun dried tomatoes, although I wish I had some pine nuts on hand to throw in bc that would have been the cherry on top for this. 
It only took 10 minutes, so if ya want a semi-healthy lunch, go for something similar!

Today's dinner was beyond amazing. As you can see, it includes shrimp, which I had not had in a long time. It also features a whole wheat pasta salad made with kale, peppers, broccoli...everything sauteed in olive oil and garlic. The cooked kale was AMAZING. 
I like to keep things simple. This meal looks elaborate but it was put together in between workouts. I can't say enough how I absolutely loved this.

A combination of protein, veggies, carbs and fats make up a balanced meal so your body can thrive and you can get all the micro and macronutrients it needs to operate at optimal capacity. 
Just eat real foods that are nutrient dense and keep you satisfied. It is that simple!
