Cheesy parmesan chicken & herb meatballs .
500gms chicken b****t mince
1/2 cup grated parmesan cheese
1/2 onion finely diced
1/3 cup chopped flat leaf parsley or basil or both
1 small garlic clove grated
1/4 tsp chilli flakes (optional)
salt & pepper .
mix together and using a mellon baller or small cookie scoop to make even balls, roll and lightly sear ( use a spray oil if needed) in a non stick pan, just to seal edges, place the pan in the oven or transfer to a lined baking tray to finish off the cooking.180c oven for 8 mins or until cooked through.
keep an eye on them and don’t over cook or the will be dry. .
