Deconstructed Sushi Bowls🍤🙌

{Perfectly balanced bowls to throw together for a quick meal right now, or prep a few for your days ahead! 😋}

makes 2 bowls/servings 
Ingredients:
1 cup brown rice
6-8 ounces raw wild caught shrimp, peeled and deveined
1 Tbsp coconut oil
salt and pepper to taste
4 Tbsp light-sodium soy sauce, or coconut aminos 
1 Tbsp sesame seeds
2 cups chopped raw vegetables such as:
red cabbage,
carrots,
cucumber,
green onions,
and avocado.
Instructions:
In a pan with lid add the brown rice and 2 cups of water.
Bring it to the boil, then simmer covered for about 15 minutes.
Preheat a non stick pan over medium high heat. Once hot,add coconut oil and shrimp, Season with salt and pepper to taste and cook for 3-4 minutes until the shrimp turns pink.
To assembly the bowls, place the rice on the bottom. Then layer the chopped vegetables and shrimp. Pour 2 Tbsp soy sauce per bowl and sprinkle with sesame seeds.

The things I’ll do for a green tick on a spreadsheet. Really didn’t want to go out tonight, it’s dark, it’s cold & windy. But knowing I’d have to put a red box next to today’s run on the plan got me out - after all it was only supposed to be 30mins easy running.

Only something took over and I ended up blasting out a sub-13 mile in the middle interval against a vicious headwind.
•
But it’s done, I can put a ✅ next to my plan tomorrow! Things are starting to come together.

Meal prepping is about more than just cooking food for the week and putting it in black plastic containers 😂 It’s about measuring portions and calculating macros. Especially with easily consumed, calorie dense sweet potatoes. (I added walnuts) happy Tuesday! Had a solid leg day today and am doing pretty well on cutting. By cutting I mean eating the correct serving size because I tend to go over board🙃I’m still eating what I want(which is typically pretty “healthy”) and still having a little dessert at night☺️ and being more aware about foods that will positively fuel my body vs the ones that’ll negatively effect it. Probably gonna kick the ball around later☺️🌞
