While the final results look fairly humble, this was a pretty easy, weeknight meal with building flavors. I had one big chunk of pork shoulder that I cut into serving portions. Seared with a little salt and pepper in vegetable oil until brown. Removed the pork and added some roughly sliced onions and cabbage to the pot. Allowed it to brown slightly then added @linvillaorchards apple cider and some cider vinegar (to taste) along with minced garlic. Nestled the pork back in and let it cook for about 15 minutes in the oven with the lid on. Peeled and halved some white potatoes, added them to let them cook and slightly brown. Finish with a splash of vinegar for brightness. Fatty, porky, sweet, vinegar-y comfort food (I guess German/Central European inspired.) The next day the leftovers are even better when all the liquid and veggies kind of thicken up.

Think I’ve found my new favourite @edinburghfermentarium product!

Somehow?! Up until recently I hadn’t tried this Cracking Kimchi, which has now definitely over taken as my favourite from the fantastic ‘Braw Slaw’ - which I’ve spoken about my love for before!
▫️
This Kimchi is traditional in style, using Chinese cabbage, carrot and flavoured with bell pepper and spices. I love that the veg is cut to be kept chunky, so there’s lots of crunchy texture to go along with the fantastic flavour!

Today I finally caught up with Ruth, the owner at @summerhallery Christmas Market, and got to pick up some new bits I haven’t tried yet! Since I love this Kimchi so much, I picked up the Xmas Kimchi, made special with the change of using cranberry, orange and spiced with cinnamon and clove. A new ferment in the Tangy Carrots and the Xmas Kimchi ‘juice’ which Ruth suggested taking as a health shot in the morning, as she does herself. I’ll let you all know how these go down once I’ve enjoyed them!

I also got to try the fermented Figs, which I’m seriously regretting not buying! Ruth suggest they would go excellently with cheese, and I now can’t help but think how great they would be with our Christmas board, or simply devoured spread on an oatcake! Think an order maybe in the pipeline!

With so many great health benefits that fermented foods provide, it’s a no brainier for me to try and add this as a tasty addition to every meal. Especially at this time of year when my immune system needs kept tip top!

according to bf "nuts are a great snack..especially when you're drinking!" bf is a huuuge nut fan! he loves the classic snacks such as chips and cookies, but nuts have a special place in his heart. so for a christmas treat i decided to make him some different flavoured nuts.

on monday i tried a peanut, cashew, pistachio and almond combo. tossed the nuts in some oil and spices and roasted them in the oven. that batch was a disaster and ended up getting extra charred and somehow was still raw. i realized my error was that there were too many different varieties jumbled together and the nuts weren't spread out enough.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
for my second batch i tried dry roasting the peanuts on the stove, and then tossing the nuts with the spice mix while hot. the spices should be added after taking the nuts off the heat, or else the spices will get toasted and the flavour profile changes. i bought the unflavoured corn nuts at #bulkbarn and toasted and tossed them the same way. the candied pecans were the pièces de résistance. as much as bf loves spicy nuts, he also has a wicked sweet tooth. he couldn't get enough of the candied pecans. i just dry toasted them on the stove, and then mixed in dark brown sugar and some water. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
these three flavours were super simple to make and the adds such a personal touch to any gift. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

🔹finely chop
a small onion 
Grate 4 cloves of garlic 
Grate a thumbs worth of fresh ginger
-Gently fry in a deep pan with a splash of oil 🔹 make a paste with your #bangspices . Continue to heat on low
