Celebratory fig & pomegranate salad🌸
i adore making this salad for special occasions. it’s so pretty & accompanies most main courses, especially roast lamb.
figs have been popular around the world for centuries. well-loved for their sweet, mild flavor and multiple uses, figs are low in calories and have no fat. figs are a great replacement for unhealthy snacks (in moderation).
figs have many health benefits:
▫️high in fibre - may help alleviate constipation and keep you feeling full longer
▫️helps lower cholesterol and control blood sugar levels
▫️good source of calcium, which can ward off osteoporosis as well as other health issues
▫️superior quality antioxidants which reduce cell-damaging free radicals in the body
▫️figs are high in vitamins & minerals
(vitamin a, c, k, b / potassium, magnesium, zinc, copper, manganese, iron)
to make the salad 👇🏼
you will need:
12 fresh figs, halved
1/2 cup pomegranate seeds
1 handful rocket
1/4 cup pinenuts, roasted
3/4 cup parmesan cheese, shaved
edible flowers to decorate
balsamic glaze to dress
gently toss all the ingredients together in
large bowl. transfer onto a serving platter, garnish with the flowers & dress lightly with the balsamic glaze.
