You know it’s gonna be a good one when the bowl is rainbow 🌈 lemony massaged kale salad (massaged with olive oil and sea salt tossed with lemon juice, finely minced garlic, salt, pepper and breadcrumbs) with diced avocados, cherry tomatoes, pan-roasted spicy potatoes (cast iron & olive oil, sriracha seasoning, cook for 7-8 min on medium covered), goat cheese, and creamy lemon dijon tuna (mix of avocado oil mayo, dijon mustard, more lemon juice)
i try to make creative meals for instagram, but i always feel so satisfied from a loaded salad. when i build a salad, i start with my base (kale, arugula, butter lettuce, etc.). i then think of my protein (faves include lentils, chickpeas, white beans, canned tuna. all of these are easy in a pinch — and cheap!) i then add in a f*t (usually avo, lets be real. sometimes cheese but often not cause my tummy can be sensitive. but also yum so it really depends on the day tbh). then i check my fridge for whatever veggies i have, and i add in as much as i can without making the flavors clash drastically. try to add tomatoes always because they’re refreshing. dressing is usually lemon and olive oil because it’s so easy and flavorful, or i’ll do balsamic vinegar and oil or mix in some dijon mustard to either of those two combos. i often will add h**p seeds or chia seeds on top for added nutrients.
it’s ok if you don’t like salads — you can 💯 be healthy without them it you sneak in your fruits and veggies to other foods. but salads can defff taste good and they don’t have to be bird food. just try it out 😉
