🌱Recipe (makes about 8 small cakes): (Save the cooking liquid from canned or cooked chickpeas.) Rinse and drain well 1-14oz can artichoke hearts. Roughly chop into lump crab-like pieces. In large bowl, add 1 cup cooked (or canned) chickpeas. Use hands to mash chickpeas until fairly smooth with some larger pieces remaining. Add chopped artichoke to chickpeas. Add to bowl: 1 small minced+deseeded jalapeño, 2 tbsp vegan mayonnaise, 1/2 tsp vegan Worcestershire sauce, 1/2 tsp lemon juice, 1/2 tsp Dijon mustard, 1/4 cup thinly sliced green onion, 1 packed tbsp chopped fresh dill, 1/2 tsp paprika, 1/2 tsp garlic powder, 1/4 tsp ground ginger, 1/4 tsp ground mustard seed, 1/4 tsp black pepper, salt to taste. Whisk 2 tbsp chickpea liquid (can or cooking liquid) until foamy. Add to bowl. Mix well. Add 1/2 cup breadcrumbs (I used gluten-free) and mix. Transfer to freezer for 20 minutes. If the mixture still feels very wet, add more breadcrumbs 1 tbsp at a time, up to 3 tbsp. Form cakes/patties and bake at 400F on lined-sheet until golden brown on both sides, about 15 minutes. (Flip patties after 7 minutes.) If you prefer you can pan-fry in non-stick with a little oil.

luckily for me, i had some frozen cooked spaghetti squash and frozen broccoli, plus a tablespoon of frozen pesto (always save your sauces!), and some leftover chicken in the fridge. toss it together and it's perfecto!⠀

Seasoned the chicken with garlic powder, chili powder, red pepper flakes, red onion and salt. Threw that in a pan till cooked. Added my chickpeas, green beans, and red cherry tomatoes  after ....... in the couscous water while boiling I added basil and celery salt 👅. You know it’s gonna be a good one when the bowl is rainbow 🌈 Lemony Massaged Kale Salad (massaged with olive oil and sea salt tossed with lemon juice, finely minced garlic, salt, pepper and breadcrumbs) with diced avocados, cherry tomatoes, pan-roasted spicy potatoes (cast iron & olive oil, sriracha seasoning, cook for 7-8 min on medium covered), goat cheese, and creamy lemon Dijon tuna (mix of avocado oil mayo, Dijon mustard, more lemon juice)

I try to make creative meals for Instagram, but I always feel so satisfied from a loaded salad. When I build a salad, I start with my base (kale, arugula, butter lettuce, etc.). I then think of my protein (faves include lentils, chickpeas, white beans, canned tuna. All of these are easy in a pinch — and CHEAP!) I then add in a fat (usually avo, lets be real. Sometimes cheese but often not cause my tummy can be sensitive. But also YUM so it really depends on the day tbh). Then I check my fridge for whatever veggies I have, and I add in as much as I can without making the flavors clash drastically. Try to add tomatoes always because they’re refreshing. Dressing is usually lemon and olive oil because it’s so easy and flavorful, or I’ll do balsamic vinegar and oil or mix in some Dijon mustard to either of those two combos. I often will add hemp seeds or chia seeds on top for added nutrients.

It’s ok if you don’t like salads — you can 💯 be healthy without them it you sneak in your fruits and veggies to other foods. But salads can defff taste good and they don’t have to be bird food. Just try it out 😉

Healthy curry chicken salad for the win! How many other recipes combine vitamin & antioxidant-rich fruit, nuts, veg, superfood spice, and healthy fats?

Save this for the next time you have left over chicken, or make some to prep a delicious and satisfying lunch. Using avocado oil mayo is a huge upgrade from store-bought mayo-based salads.

To make, combine:
*3 Cups cooked chicken, chopped (I use half the chicken from my Instant Pot chicken soup recipe)
*1 Medium apple, chopped (somewhere between chopped and diced)
*3 stalks of celery, chopped
*1/4 Cup of sliced almonds
*1 Tablespoon curry powder
*3 Tablespoons avocado oil mayonnaise (@sirkensingtons is my fave)
*Cracked pepper to taste

Eat on its own, scooped on on a bed of greens, in a pita, or lettuce / cabbage cups!

Makes apx. 26 pieces⠀

Ingredients:⠀
2 pounds carrots, peeled and sliced into 4-6 inch pieces ⠀
2 tablespoons  olive, grape seed or avocado oil ⠀
2 tablespoons brown sugar⠀
1 teaspoon salt ⠀
1 teaspoon cinnamon⠀
Optional accessories:⠀
Freebie; orange or lemon zest, and fresh thyme to garnish ⠀
Decadent; chopped pecans and/or chopped raisins or dates ⠀
Directions:⠀
Place carrots into a steamer for about 10-12 minutes or until fork tender. ⠀
Meanwhile, preheat the oven to 400 degrees. ⠀
In a small bowl, mix together salt, brown sugar and cinnamon. Add the oil and turn into a paste. ⠀
Let the steamed carrots sit to cool, then place on a parchment- or tinfoil- lined baking sheet. ⠀

I used 56g or 1 serving of deli turkey (6 slices) and set them out to layer on top of each other in the shape of a circle tortilla. Then I added 2 slices of reduced fat provolone cheese, spread one laughing cow spicy pepperjack wedge on top of all that, then sliced lengthwise 2 pickles and placed them. Then roll like sushi, get a nice sharp knife and cut into rolls. 🥰
.
The rest of the food is eating the veggies I love. I could add these to each meal I eat everyday. Also. That Tasty ranch seasoning you get in the seasoning section at the store (duh Schauna) is game changer on veggies! I’m using fat free thousand island dressing as a dip too 😍

Little Lunchfox woke up on the wrong side of the bed this morning, and fixated his sour feelings on demanding noodles for breakfast in the most “I’m three years old” way possible. He pulled out all the stops, poor kid, but mama couldn’t relent when breakfast was already plated by dad and ready to be eaten. 1. pasta 🍝arugula, roasted tomatoes 🍅(roasted for about 10 minutes on 450 brushed with olive oil), sautéed asparagus, and 4 jumbo shrimp 🍤 seasoned and seared on medium high for about 3 minutes per side. I tossed everything with a quick dressing made with olive oil, garlic, lemon 🍋 , salt, pepper and parsley blended up 😍

2.Mandolin cucumber 🥒 slices, drizzled with coconut aminos, lemon 🍋 juice, sesame seeds and mustard seeds. Wild salmon 🐟 steak: patted dry, seasoned with salt and pepper, then seared over medium heat in cast iron in a mixture of coconut 🥥 and sesame oil (3:1 ratio) for about 5 minutes per side. When you flip it, add some coconut aminos and crushed garlic to the pan for some extra flavor and caramelization 😋

3.CHICKEN 🍗: pat breasts dry, season with salt and pepper then place in the fridge on a rack uncovered for 30 + mins. Remove, pat dry again, season with zaatar seasoning and some lemon 🍋 zest. Heat cast iron over medium low with some coconut oil and place chicken breast side down and cook for 9 minutes. Lift the chicken and add a little ghee or butter and let it cook for one minute before flipping and cook for another 5 mins on the other side 😋.

4. Shrimp 🍤 boiled then tossed in chipotle hot sauce and coconut aminos , avocado 🥑 and eatbanza pasta 🍝 with tomatoes 🍅 and sautéed spinach and this ranch sauce. Ranch sauce (makes enough for a whole box of pasta): 1/2 cup yogurt, 2 teaspoons tahini, 1 tablespoon fresh chopped dill, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 tablespoon lemon 🍋 juice and salt/pepper to taste 😍

day 3 is all about a lighter 'sandwich' for our "tempeh sandwich a day" this week.

using a wrap in place of bread is a great alternative to a slightly lighter lunch, we used @bfreefoods sweet potato wraps, homemade coleslaw with red cabbage, carrot, vegan mayo, dijon mustard, lemon juice, red onion and shredded cabbage and leaves all rolled up with an overnight marinated tempeh with lemon juice, garlic and paprika and gently grilled.

the tempeh in the wrap is a great source of protein, low carb, gluten free and will leave you feeling full, not to mention its delicious!

I know I should be eating them more though so unfortunately for me it has to be done. .

In this recipe there is zucchini and spinach to help me increase my vegetable consumption. Whenever I include vegetables in a meal I think of what kind of fat I can include to make them taste better because fat tastes good and vegetables taste like butt. Sausage is a great way to mask the flavors of vegetables. It has a distinct and overpowering flavor so it was an easy choice for this dish. I also wanted to help mute the texture of the zucchini so I paired it with sweet potatoes to change up the monotony that would have been plain zucchini. Hard boiled eggs are my go to egg for meal prep. They last better than other methods. .

On the weight loss side I included a higher zucchini:sweet potato ratio and lessened the amount of sausage. You could also use a turkey sausage instead of pork or beef to lessen the calories even farther. I don’t love using turkey sausage for this meal because of how much lower in fat it is and the fat really does make a difference here, but it’s an option. The weight gain side has a bit more potatoes, more sausage, and more eggs. More calories are needed if you’re looking to grow!! #healthylifestyle

Bowl con quinoa, sugar snaps, tomate cherry, lechuga, platano y pollo marinado.

𝗥𝗲𝗰𝗲𝘁𝗮 𝗽𝗼𝗹𝗹𝗼 𝗺𝗮𝗿𝗶𝗻𝗮𝗱𝗼.
INGREDIENTES:
° 1 Ajo mediano.
° 2 Cdas de aminos o salsa soya.
° 2 Cdas de pamela.
° 1 Cda de sriracha sauce.
° 1Cda de aceite de aguacate.
° 1-2 pechugas cortadas en cuadros.
° Sal al gusto. 
PROCEDIMIENTO:

1️⃣ Colocar todos los ingredientes en un bowl y luego agregar el pollo en cuadros y dejar marinar.
2️⃣ En un sarten caliente con un poco de aceite de coco colocar el pollo hasta que cocine muy bien.
3️⃣ Listo!!!! A servir y disfrutar 😋.
