Spaghetti with chicken & tomato garlic sauce... a very fulfilling meal for a nice & slow day off 🤗 this meal was inspired from @pinchofyum

- 500g chicken breasts
- 2 garlic cloves
- 1 tsp dry oregano - 1 tsp dry basil
- white vinegar - salt
- 450g cherry tomatoes
- 2 tbsp olive oil
- 4 cloves garlic
- 2.5 tbsp balsamic vinegar
- 1 cup water
- salt to taste
clean chicken with white vinegar & finely chop the 2 garlic cloves. in a hot pan with oil, start with the garlic to release its aroma, then add the chicken, salt, oregano and basil. cook the chicken through & rep the pasta.
place the tomatoes in a nonstick pan without any oil. once the skins get a little blistered and the tomatoes are looking soft, add the olive oil and 4 minced garlic cloves. press the tomatoes gently with the back of your spoon to break open and release their juices. add the balsamic vinegar, water& salt; boil until it’s thickened.
add the spaghetti to the sauce and mix well. top you dish with the prep-ed chicken & enjoy ❤
notes: i initially used 3 tbsp, but i think 2.5 tbsp would have been perfect for recipe (i have doubled the recipe because we love an extra saucy pasta).
