I N G R E D I E N T S
1 lb cauliflower small florets
1 can of chickpeas drained, rinsed, & dried
1 tsp each of cumin, garlic powder, smoked paprika, turmeric, coriander, 1/2 tsp of salt, 1/4 tsp each of cinnamon, ginger powder, black pepper, 1/8 tsp of cayenne, 1/4 cup olive oil, juice of 1/2 lemon Tzatziki Sauce: 1 cup non dairy plain yogurt, juice of 1/2 lemon, 2 garlic cloves minced, 1 tbl of fresh dill ( sub dried dill weed to taste), 1 mini cucumber grated with water squeezed out using kitchen towel, s/p to taste

I N S T R U C T I O N S
1️⃣ In a medium bowl combine chickpeas & cauliflower.
2️⃣ In a small bowl combine spices, oil, and lemon mix well
3️⃣ Pour mix over veggies till everything is coated
4️⃣ On a parchment lined large baking sheet, roast chickpeas & cauliflower at 425 F for 25-30 Rotating and flipping half way through
6️⃣ Meanwhile, make tzatziki sauce, combine all ingredients, mix well
7️⃣ Wrap up in your favorite wrap style bread (I used pita) drizzle with tzatziki sauce. I also added pickled red onions, cucumbers, pickles, hummus, & some parsley. .

Ingredients (5-6 pancakes):
120g (4oz) chickpea flour
½ tsp salt
½ tsp baking powder
80-100ml (3-4oz) water
1 small zucchini
80g (3oz) corn, cooked
5 dried tomatoes, cut in small pieces
1 Tbsp fresh herbs (rosemary, thyme, basil), chopped
1 tsp Olive oil
✨
Method: Grate zucchini and generous sprinkle with salt, set aside. Mix chickpea flour, baking powder and salt. Mix in the water until well combined. Lightly press the grated zucchini to remove part of the liquid. Add the zucchini together with the corn, tomatoes, olive oil and herbs to the batter. Let the batter rest for 15 min. Heat up a little of olive oil in a large pan. Fry pancakes from both sides until golden brown.

Ingredients sauce:
5 Tbsp unsweetened soy yogurt
1 Tbsp tahini
1 Tbsp lemon juice
½ tsp granulated garlic
1 tsp maple syrup
Salt & pepper to taste

Carrots: 2 cut in thin strips

Vermicelli noodles: 2 portions cooked as per packet instructions

Method:
1) Place whole block of pressed tofu in a lidded container with the marinating ingredients. Refrigerate for at least 1 hr turning the container every 10 minutes for an even marinade
2) Take tofu out of the container and place on a chopping board. Cut tofu in bite sized pieces and return to the container. Sprinkle 1 T arrowroot powder over tofu and put the lid on. Shake to coat evenly then tip the tofu onto a lined baking sheet and drizzle with olive oil.
3) Roast in a preheated oven at 190C for 30-35 min turning half way
4) While tofu is cooking make your noodles. In a bowl mix together liquid aminos, xylitol, apple cider vinegar, dried basil and sriracha. In another bowl mix together arrowroot and water
5) Heat olive oil in a wok and add ginger, carrots, celery and broccoli. Stir fry for 5 minutes and add contents from both bowls mixing constantly to avoid lumps. Add noodle and stir fry for a few minutes. Garnish with fresh basil leaves.

Mashed potatoes with a hearty mushroom lentil stew by @elavegan. Quick vegan recipe. 
For the Mushroom Lentil stew:⠀
1 cup dry lentils, green or brown (190 g)⠀
1 large onion (chopped)⠀
2 cloves of garlic (minced)⠀
1 tbsp oil (for frying)⠀
3 tbsp white wine (40 ml) (optional)⠀
3 cups vegetable broth (720 ml)⠀
2 cups mushrooms sliced (135 g)⠀
2 tbsp soy sauce⠀
1 tbsp balsamic vinegar⠀
1-2 tsp each of dried parsley, thyme and oregano⠀
A splash of coconut milk canned⠀
1/2 tbsp cornstarch⠀
black pepper and chili flakes to taste⠀
Chopped pickles to taste (optional)
For the mashed potatoes:
4 medium-sized potatoes (600 g)⠀
1/4 cup coconut milk canned (60 ml)⠀
1/2 tsp nutmeg (or more/less to taste)⠀
black pepper, sea salt to taste
Steps:
Rinse lentils under running water. Meanwhile, chop your onion, garlic, mushrooms. Heat oil in a skillet/frying pan, stir in the diced onion, the minced garlic and fry for 3 minutes over medium heat.⠀
Add mushrooms, dried parsley, thyme, oregano, white wine (optional), balsamic vinegar, soy sauce (or tamari/coconut aminos to taste) and fry for a further 3-5 minutes.⠀
Now add the lentils and 3 cups of vegetable broth and cook on low-medium heat (add more broth if needed) until the lentils are tender (about 20 minutes).⠀
In the meantime, peel and chop potatoes, transfer them to a pot with salted water and bring to a boil. Cook on medium heat for about 15 minutes or until tender, drain. Transfer back to the pot, add coconut milk, nutmeg, black pepper and sea salt to taste and mash with a potato masher (don't use a food processor or blender).⠀
Once the lentils are tender, mix a generous splash of coconut milk and cornstarch in a small bowl and pour this mixture into the lentil stew. Cook for a further 1 minute or until the desired thickness is reached. Season again with soy sauce (if needed), black pepper, and chili flakes.⠀

2 cups (250g) raw broccoli florets
1/4 cup water
1 small (70g) red bell peppers, sliced into strips
1/2 red onion sliced into strips
4 cloves garlic, minced
1 tbsp canola or other neutral cooking oil
Sesame seeds and chopped spring onions for garnishing
3 cups of steamed white rice or other rice, for serving

Note: *Feel free to use fresh shiitake mushrooms.
_
Sauce
1/4 cup soy sauce
1/4 cup + 1 tbsp room temp. water
1/4 cup coconut sugar, adjust according to desired sweetness
1 1/2 tbsp Chinese rice wine, optional but highly recommended
1 1/2 tbsp cornstarch
1 tbsp sesame oil
_
Steps
Rehydrate the dried mushrooms by soaking in hot water. Squeeze out excess liquid from each mushroom and then slice them into 1/2-inch thick strips. If using fresh mushrooms, simply slice them into strips. Set aside.
In a bowl, mix all the sauce ingredients together until the sugar is diluted. Set aside.
Heat a non-stick or cast iron pan. When hot, add in 1 tbsp canola or neutral oil. Sauté the onions and garlic until tender and aromatic, around 2-3 minutes. Add in the broccoli florets. Pour ¼ cup water and leave to cook over medium high heat until half-cooked. Add in the bell peppers and sauté for a few more minutes.
Add in the mushrooms. Pour in the sauce mixture. Mix everything together and leave to simmer over medium heat until the sauce has thickened from the cornstarch. Turn off heat.
Serve with some steamed rice. Garnish with some sesame seeds and spring onion, if desired. Enjoy while hot!

I’m going with this delicious and easy pasta dish starting with 3 net carb @almondlovewith pasta. This is probably one of my fav recipes with the pasta so far...slightly dangerous… you’ll be reaching for seconds in no time.

Super super easy to make:
.
1.Cook a bag of @almondlovewith according to the directions. I went with the soft method, so I just soaked in water while water was boiling and boiled it for 12 minutes.
.
2.While the pasta was cooking, I made the sauce. I started by melting 2.5 tablespoons of butter in a sauce pan, adding 2 cups of @josiesorganics spinach, and mixing for 1 minute.
.
3. After 1 minute, I added 1.5 tablespoons of cream cheese and mixed everything well for a couple of minutes, then added 1/2 cup cream, 1/2 cup of shredded parmesan, and a couple of garlic cloves. Mix well on low.
.
4.Give your sauce a taste and at this point you can add some salt, pepper, garlic powder, chili flakes, lemon zest, or some fresh herbs. You can do whatever you like and all of those are great options.
.
5.Once the pasta is boiled, strain, add a couple tablespoons of the pasta water to the sauce to lighten it up if needed, and add the pasta to the sauce and cook for another minute or so together to get the flavors going.
.
6.Eat as is, or top with your favorite protein. I added some @sizzlefishfit scallops that I blackened.
.

Vegan Burrito Bowl - one pot! Great recipe by @the_buddhist_chef:

Ingredients
3 tbsp olive oil
1 red onion, diced
1 red pepper, diced
1 zucchini diced
1/2 cup frozen corn
1-400 ml/ 19 oz can black beans, drained
1 cup basmati rice (raw)
3 tbsp taco seasoning
2 cups vegetable broth
1 tsp maple syrup (optional)
salt and pepper to taste

Directions
In a large pan heat the olive oil over medium heat. Saute onions and red peppers for 7 minutes.
.
Stir in zucchini, frozen corn, black beans, basmati rice(I would suggest coking rice first to al dente) tacos spices, and maple syrup (optional).
.
Pour in vegetable broth and then bring to a light boil. Cover the pan and reduce heat to low. Cook for an additional 10 to 15 minutes, or until the rice is all the way cooked.
.
When rice is done, S&P to taste. Top with your favorite toppings.

in a large pan heat the olive oil over medium heat. saute onions and red peppers for 7 minutes.

stir in zucchini, frozen corn, black beans, basmati rice(i would suggest coking rice first to al dente) tacos spices, and maple syrup (optional).

pour in vegetable broth and then bring to a light boil. cover the pan and reduce heat to low. cook for an additional 10 to 15 minutes, or until the rice is all the way cooked.

when rice is done, s&p to taste. top with your favorite toppings.

RECIPE✨
Ingredients (3-4 servings):
300g (12oz) green asparagus
1 small zucchini
150g (5oz) mushrooms
100g (3.5oz) cooked artichokes hearts
200g (8oz) spelt
4 Tbsp wild garlic pesto (recipe below)
Salt & Pepper

Method:
1. Cook spelt according to the packaging instructions. Drain water excess water.
2. Cut zucchini lengthwise and slice thinly. Quarter green asparagus and slice mushrooms.
3. Heat up a large pan and add 1 Tbsp of olive oil. Add zucchini slices and fry until slightly brown.
4. Add green asparagus and fry for 3 min. Add the mushrooms and artichoke hearts and fry for another 3 min. Add in the cooked spelt and mix well.
5. Mix in the wild garlic pesto and add salt & pepper.
🌿

40g (1.5oz) wild garlic
5g (10 leaves) fresh basil
30g (1oz) pumpkin seeds
1 Tbsp nutritional yeast
3 Tbsp olive oil
1 Tbsp of water

Blend all ingredients until well combined. Adjust thickness with a little water if necessary and add salt & pepper to taste.

💫Ingredientes:
-18 cdas coco rallado (1 taza y ⅓ aprox)
-7 cdas bebida de coco
-1 cdta esencia de vainilla
-1 cda de syrup sin azúcar/ maple/ arce
-pizca de sal
-chocolate amargo vegano

💫Pasos:
1) Primero se mezcla el coco rallado con la bebida de coco
2) Después agregan la sal, vainilla y syrup para darle más dulzor

Making tofu meals is so much easier since I bought a tofu press! Easier but not quicker in my kitchen as I like to marinade my tofu overnight for maximum flavour.
🌶
Recipe:
Ingredients:
For tofu:
Tofu: 1 block pressed and cut 
For slurry
Flour: 1T
Water: 2T
Miso paste: 1 T
Panko breadcrumbs or oats: ½ C
Salt and pepper
Olive oil to fry or less oil to roast 
For marinade:
Tamari/soya sauce/ liquid aminos: 3T
Sriracha : 2 T
Coconut milk: 1 T
Xylitol or sugar : 1 T
Chinese 5 spice: ½ T
Ginger powder: 1 t
Method:
Place tofu in a container with the marinade ingredients. Refrigerate at least for 2 hrs.
Make a slurry with flour, miso and water and place in a bowl
In another bowl place the Panko breadcrumbs and season with salt and pepper 
Dip tofu in the slurry then coat with breadcrumbs 
Fry in olive oil or spray with oil and roast till crispy 
For fried rice: 
Basmati Rice: 2 C cooked
Onion: 1
Ginger: 1T grated 
Peppers: 2 roughly chopped
Carrots: 2 cut in strips
Sesame oil: 1 T
Remaining marinade from tofu
Slurry from tofu: 1 T
Method:
Heat sesame oil in a wok and when hot add all the veggies
Cook stirring and add marinade and slurry 
Mix in rice and serve hot

Recipe:
Ingredients:
Cauliflower: i floret cut into bite size pieces
Water
Oil for deep frying
For marinade:
Vegenaise: 1 T
Garam masala: 1/2 T
Cumin powder: 1t
Coriander powder: 2t
Amchur powder: 1t
For Batter:
Flour: 2 T
Corn flour: 3 T
Salt: 1t
Pepper: 2t
Turmeric: 1/2 T
Chilly powder: 2t
Beer or cider: 1 C
Method:
1) Bring a pot of water to boil and add cauliflower. Cook for 4-5 minutes and drain

ingredients:
cauliflower: i floret cut into bite size pieces
water
oil for deep frying
for marinade:
vegenaise: 1 t
garam masala: 1/2 t
cumin powder: 1t
coriander powder: 2t
amchur powder: 1t
for batter:
flour: 2 t
corn flour: 3 t
salt: 1t
pepper: 2t
turmeric: 1/2 t
chilly powder: 2t
beer or cider: 1 c
method:
1) bring a p*t of water to boil and add cauliflower. cook for 4-5 minutes and drain

Ingredients
4 Whole Chicken Leg Quarters Bone-in Skin-on
1 tsp Salt
1/3 cup Bloomed Saffron
2 tbsp Olive Oil
1 Large Yellow Sweet Onion Thinly Sliced
1 Large Green Bell Pepper Cut into one-inch pieces
1/2 tsp Turmeric
1/4 tsp Ground Black Pepper
1/2 tsp Ground Cinnamon
1 Cup Water

Instructions
Heat a skillet over medium heat. Pat dry chicken legs and sprinkle salt on both sides. 
Place the chicken legs, skin side down in the pan and sear until the skin is golden and the fat is rendered. 
Add in one tablespoon bloomed saffron to the pan, shake the pan so the saffron spreads on the skin on the chicken. 
Turn the chicken legs and sear the other side for seven to eight minutes until golden. 
Transfer the chicken legs to a plate and cover. Discard the fat. 
In the same pan, heat the olive oil. Once shimmery and ready, saute sliced until until translucent and golden on the edges. 
Add in green bell pepper and saute for another minute. 
Add in turmeric, cinnamon and black pepper. Cook for another five minutes. 
Place the chicken legs on the onion and pepper mixture. 
Add in Water and turn the heat to high. 
Bring it to simmer, cover and cook for 40 minutes, until the chicken is almost cooked. 
Add in the rest of bloomed saffron. Cook for another 10 to 15 minutes until the chicken is fully cooked. 
Serve with Persian rice, or Persian dill and green pea rice. 🌟🌟🌟🌟

For the creamy curd rice:
⚪Boil the rice and mash it completely while its hot.
⚪Add a cup of curd and half a cup of milk once the smashed rice cools completely.
⚪Add salt and temper it with some mustard seeds, ginger, green chillies in ghee and garnish it with coriander.
Tastes better when prepared in advance and served.

Recipe - Potato roast ⚪Boil the potatoes well. Peel off the skin and dice them into small pieces. ⚪Add three spoons of oil to a pan, add in Mustard seeds, Cumin seeds, garlic, onion and curry leaves. Once the onions turn slightly brown in colour, add the boiled potatoes. ⚪Add in chilli powder, saambar podi, turmeric powder and salt. ⚪Add oil in between and slow cook these potatoes until they are evenly roasted. Add a spoon of rice flour to roast them quickly.

The meat wasn’t chewy - which is something I always worry about with red meat - and there was a lovely bbq taste to it. I loved the addition of fresh chillis and garnishing as it added some colour that a lot of loaded fries don’t have. I would definitely go back and have this again.

Her er bulgur, ovnbagte kikærter med krydderier, hjertesalat, spinat, agurk og tomater.. top med lidt shiracha og tahini og du har en skøn frokost! Også nem at mealpreppe! This was the last lunch in Paris I enjoyed so much with my roommate before my leaving. It was so colorful, so tasty. And we are not going home without dessert of course- again😋 @fume_paris highly recommend👌🏻Everything so fresh, the best tuna tartare ever! Backed eggplant with tahini sauce, the sweet potatoes big bowl of quinoa salad with avocado and backed salmon😍🥑🥗🥬🍠🍆🍤 Strawberry pie and chocolate mousse with orange zest 🍰🍮🍫🥜This place is insanely good!
