I didn't waste any time making (or eating) these shrimp after i saw the recipe! straight from the bon appetit test kitchen, (find it on you tube) i give you shrimp with basil. the only altercation i had to make was using jalapenos instead of fresno peppers. (i couldn't find them) i think the heat level is the same but i think the fresnos are "fruitier". either way you'll end up with amazing shrimp! you'll need:
1 lb shrimp -raw, shell on deveined. i used medium shrimp -26/30 per lb.
3 fresno chiles
6 cloves garlic
2 tbs fish sauce
3 tbs vegetable oil
1/4 cup sugar
1 tsp salt
2 cups small basil leaves.
peel the shrimp leaving the tails on. roughly chop the peppers and garlic. you can leave the seeds in for more heat. throw everything except the basil in a blender and process until smooth. marinate the shrimp for 10 minutes. heat a large non stick skillet, (medium high) add about a tbs of oil. shake off marinade and cook shrimp in a single layer for a about a minute per side or until it starts to caramelize. cook one more minute on the other side. repeat with remaining shrimp. toss with basil and serve. squeeze some lime over if you want. .
i'll be making this all the time. hits all the tastes buds, sweet, heat, tangy.... it's so good!! next time though i use fresnos and throw these on the grill! ♨️ .
