starting the day with a quick and easy delicious "protein packed pancake" :

recipe
cook the sweet potato the night before.

in a high speed blender, add:
1 medium sized sweet potato
1 egg
3 egg whites
4 spoons greek yogurt (n3000/litre)
1/4 cup oats
1 tsp cinnamon
1 tsp vanilla extract
blend for a minute or two. spray a pan with cooking spray from @cleverkitchen.ng and place over medium heat. pour into pan about 1/4 of a cup...i usually can get 3 pancakes in the pan. cook for 1 - 2 minutes per side. serve w pure maple syrup and berries (fresh strawberries available)on the side. enjoy!
