i’m in the midst of recipe and technique development for a short online chocolate easter course. these are the first ones i’ve tried and really love the effect. they’re certainly a labour of love, but so worth it. definitely room to improve, but pleased with my first attempt at this technique. next up is a “creme egg” and i’ll be working on a sort of sweet thai curry vibe; mango lemongrass compote, thai basil lime creme and roasted peanut feuilttine all encapsulated in beautiful layers within a dark chocolate egg. i’ve been wanting to test this thai curry dessert concept for over a year, so let’s see how that goes over the next week or so...
