Quiche vegetariana com castanhas e abóbora para festejar o S.Martinho 🌰 
Base:
100g de amêndoas com pele trituradas*
100g de farinha de grão de bico
50g de óleo de coco*
Sal e pimenta 
Começa por triturar bem as amêndoas (usei processador da @russellhobbs_pt) depois junta a farinha de grão de bico (ou outra da tua preferência), o óleo de coco derretido o sal e a pimenta. Espalha a massa numa tarteira e leva ao forno por 15/20 minutos. 
Entretanto o recheio:
1 cebola roxa fatiada
4 dentes de alho laminados
300g de cogumelos frescos laminados
200gr abóbora ralada ou fatias fininhas
60g (dois punhados) de espinafres frescos
200gr de castanhas cozidas*

95g de ricotta (usei de búfala)
4 ovos
100g de claras de ovo*
Sal rosa* e pimenta 
Levedura nutricional (opcional)

Salteia a cebola e o alho com um fio de azeite, depois de bem douradinho junta os cogumelos, deixa alourar e adiciona a abóbora e os espinafres, deixa refogar e secar o excesso de líquido, por fim junta as castanhas e tempera. 
Bate os ovos numa tigela, junta a ricotta e umas gotas de sumo de limão se desejares. 
Verte os legumes sobre a base da quiche, depois os ovos com ricotta e por fim a levedura nutricional (da um sabor a queijo 🧀 ótimo) 
Leva ao forno por 25 minutos até ficar firme e os ovos cozinhados!

cioccolato fondente_ 80g⁠
uova (3 medie)_ 150g⁠
zucchero_ 180g⁠
burro_ 80g⁠
farina00_ 250g⁠
lievito in polvere per dolci_ 16g⁠
latte intero_ 40g⁠
zucchero a velo per spolverizzare_ q.b.⁠

separa tuorli e albumi. con le fruste elettriche monta gli albumi a neve ferma e metti in frigo.⁠

in una ciotola versa i tuorli e lo zucchero. lavora con le fruste pulite fino ad ottenere un composto chiaro e spumoso. aggiungi a filo il burro fuso tiepido continuando a lavorare. unisci poi la #ricotta e lavora a velocità media fino fino ad ottenere un impasto liscio.⁠

versa all'interno del composto gli albumi montati e mescola delicatamente dal basso verso l'alto. setaccia all'interno farina e lievito e mescola sempre dal basso verso l'alto. aggiungi il latte a temperatura ambiente e amalgama per farlo assorbire.⁠

versa il composto in uno stampo imburrato da 22cm distribuendolo con una spatola. cospargi con il #cioccolato tritato grossolanamente. ⁠

cuoci in forno statico a 180°, nel ripiano basso, per circa 30 minuti. sforna, lascia intiepidire e spolverizza con zucchero a velo!⁠

Full of flavour..such a delicious combo!
It’s a super easy recipe to make and great for when your entertaining and sharing with friends!🌟Perfect for the silly season ahead🤪
The recipe below makes a fair bit for one tart,but will keep for 4-5 days in an airtight container in the fridge🙌

Recipe- Ricotta
1 Cup Raw Cashews- soaked overnight 
185g form organic tofu
1 Lemon- juice of
Zest of 1/2 lemon
2 1/2 heaped Tbls nutritional yeast
5 Tbls almond milk
2 cloves garlic 
A few sprigs of fresh thyme or 3/4 Tsp dried
Salt and pepper

Drain and rinse cashews.
Place all ingredients into a high speed blender and blend until smooth and creamy..

1 x sheet of puff pastry 
2 tubs Cherry tomatoes .
.

Heat oven 200 deg C
Place baking paper onto a tray
Place puff pastry sheet on to tray
With A knife score around the edge leaving Aprox 1cm from edge
Place a good layer of ricotta cheese on pastry within the square that you outlined with a knife.
Next halve the tomatoes and place on top.
Place in oven for approx 20 mins or until puffed and golden.
Take out and sprinkle with a few basil leaves and some more ricotta.
Serve straight away🌟

In a food processor (not blender), add 1 C soaked blanched almonds + 1/4 C lemon juice 🍋 + 1 dash of dulse + 1 dash of white or black pepper + 1/4 tsp sea salt 🧂 + 1 tsp onion powder + a pinch of rosemary or sage. Add filtered water a little at a time until it starts to blend, but you want to keep it thick. ✨Add a little olive oil, and keep blending until it’s smooth and creamy. 😋 Dip your favorite crackers in it and call it a day! 👯‍♀️

INGREDIENTS ⁠
1 large butternut squash, 1 large yellow onion, 5 cloves garlic, a handful of fresh sage & thyme, 2 cups chicken or veggie stock, 1 cup of milk, 1 package of jumbo shells, 16 oz ricotta, 1 egg, 1/4 cup of parmesan cheese, 1 package of apple chicken sausages, 1 package of spinach, salt, pepper, and olive oil ⁠

INSTRUCTIONS:⁠ 1️⃣ Use a parchment baking sheet, add diced butternut squash and onion, smashed garlic cloves, fresh herbs, a good drizzle of olive oil, salt & pepper. Roast at 375 degrees for 45 minutes or until very tender. Let cool, then add to either a large bowl with an immersion blender or a food processor. Add stock & milk and blend until a smooth sauce forms. Add liquid until you reach the consistency of sauce you like. ⁠
2️⃣ Meanwhile, cook shells according to package instructions. Brown chopped chicken sausages in pan, turn to low, add spinach, sauté for 1-2 minutes, remove from heat and let cool. ⁠
3️⃣ In a large bowl, combine ricotta, egg, cheese, a pinch of salt & pepper. Once sausages & spinach have cooled, add to the ricotta mixture, stir and combine. ⁠
4️⃣ Pour sauce into the bottom of a large casserole dish. Stuff shells with ricotta mixture & add them to the sauce. Bake at 375 degrees covered for 15 minutes, uncovered for 10 minutes⁠

Per serving: 348 Kcal; protein - 19,7g; carbs - 27,5g; fat - 18,7g

Ingredients:
- 400 g spinach
- extra-virgin olive oil
- ¼ teaspoon ground nutmeg
- 1 onion
- 2 cloves of garlic
- 2 x 400 g tins of quality plum tomatoes
- 1 bay leaf
- ½ a bunch of fresh basil , (15g)
- ½ a lemon
- 1 large free-range egg
- Parmesan cheese
- 250 g ricotta
- 150 g cannelloni , about 14 tubes
- 2 x 125 g mozzarella balls

Instructions:

Preheat the oven to 180°C/350°F/gas 4. Put the spinach and a drizzle of olive oil in a large pan over a low heat. Add the nutmeg, season with sea salt and black pepper, cover and leave to sweat. Help the kids to stir it occasionally until the spinach has cooked down. Place in a bowl and set to one side to cool a little.

Dice the onion and squash the garlic. In the same pan, heat a drizzle of olive oil and gently sweat the onion until soft.

Scrunch in the tomatoes through your clean hands and add the garlic and bay leaf. Pick in a few basil leaves and grate in the zest of the lemon half, then let it gently simmer for 20 minutes until the sauce has thickened. Season with salt and pepper.

Have the kids squeeze the moisture out of the spinach into the bowl. Place the spinach on a board so you can chop it up. Return the spinach to the liquid in the bowl.

Beat the egg and grate 2 teaspoons of Parmesan cheese. Get the kids to stir the ricotta, egg and Parmesan into the spinach. Season to taste.

Sit a piping bag in a jug, fold its edges over the rim, then spoon in the spinach mixture. Have the kids help pipe the mixture into the cannelloni tubes and lay them in a 20cm x 25cm oven dish.

Spread the tomato sauce over the cannelloni. Pick the remaining basil leaves and scatter most of them over the tomato sauce. Slice the mozzarella and lay the slices on top, drizzle with extra-virgin olive oil and season.

Place the oven and cook for 35 to 40 minutes or till the top is golden and the pasta tender (if the top browns too fast, cover the dish with foil). Remove from the oven and let stand for a few minutes before serving with the remaining basil leaves.
