Just when i thought i could finally pursue the art of making fried chicken properly, i found out that the pandemic might be causing a rise in meat and dairy prices. bah. well, here’s some tikka masala fried chicken that i made! despite its crispy shell, the meat within was wonderfully juicy. i had read that salting meat prior to cooking was an important step to achieving this, so i gave the drums an overnight rub of salt and spices before frying. .
with adequate time salt infiltrates the meat proteins, where it plays a key role during cooking. as heat is applied to meat, protein bundles contract and shrink, pushing out water molecules in the process. the result is an unfortunate, sadly dry piece of meat. however, with the addition of salt something else happens. salt dissolves some of the proteins and loosens the remaining fibers, which helps the meat retain its natural moisture since the water molecules are not squeezed out this time around. this not only lets you cook the meat for longer, it also gives the meat an extra boost in flavor! .
