‘s recipe for this delicious dish:
1 kg clams
6 tbsp evoo
2 garlic cloves, peeled, thinly sliced
1 small glass of white wine (100 ml)
a pinch of red smoke chili flakes
a small tomato (finely chopped) optional
handful of flat-leaf parsley or basil
1. clean clams well and set aside (or you can use frozen-stove ready)
2. cook the pasta in boiling salt water until al dente
3.warm a little of the oil in a pan with the thinly sliced garlic. add the clams (& tomato if using) and the wine, shake then cover. after one minute shake again, then lift the lid and discard any clams that do not open up.
3. drain the pasta (reserving a cup of pasta cooking water) and then add to the clams. cool for a few seconds, add a splash of the pasta water. add some parsley or basil, then toss and serve.
