keto boba fruit tea
yes...keto!!! i'm so excited that this was like legit boba!!
the texture is dead on!
recently i've been craving boba, so i looked up how to make it. thethingswellmake.com made some homemade boba using tapioca starch, which is gluten & grain free, but obviously not keto, with a whopping 135 carbs!
i've seen some use some straight up flavored jell-o cut into chunks. and i'm sure that's tasty, but i wanted that boba texture.
i found the cutest little silicone ice tray on amazon, & it worked perfectly for the round shape.(see pics)
the ones that didn't come out in a whole piece worked better for going through the straw. oh, and you'll need to buy the extra large boba straws for the boba to fit through.
even then, you'll need to break the boba up very slightly. and those are reusable & come with straw brushes to clean them. i also bought a fancy mason boba jar with aluminum straw, but the boba was too big for it. i had to use dome cups instead.
anyway, here's what i did👇
1 tb unflavored gelatin &
2tb cold water in a small bowl & let sit for about a minute.
i then added between
1/4-1/3 cup very hot water
fruit tea mix
whisk till gelatin is dissolved & pour into tray.
cover with saran wrap
& chill till set.
i just put mine in the fridge overnight.
then pop those suckers out. put into 2 cups.
then i made @goeverly
fruit tea by mixing 32 ounces of ice cold water, & 1 1/2tsps of the fruit tea mix, & a few drops of @oooflavors
pour this evenly between the cups.
you can use sweetener of choice, but the fruit tea is sweet enough for me.
add a few tbs of heavy whipping cream to each serving. (optional)
top with homemade whipping cream & @thesprinklescompany
sugarfree sprinkles on top.
i'm making a coffee version right now & will post. and some with a sugarfree simple syrup. i'm gonna make all kinds of flavors, so keep your peepers peeped!
