FALAFEL:
2 cans chickpeas (drained)
1 red onion (finely chopped)
Juice of 1 lemon
3 cloves garlic
2 tsp Harissa paste
1 tsp Salt1 tsp Cumin
½ tsp Pepper
½ cup Flour
¼ cup Coriander
¼ cup Parsley

BATTER:
1 cup Plain flour
½ cup Almond milk

CRUST:
1 cup Panko breadcrumbs
Vegetable oil (for frying)

TO SERVE:
Hummus
Salad

METHOD:

1.Put all the falafel ingredients into a food processor & whizz them up into a thick paste.
2.Take a spoonful of the mixture out of the food processor, roll it up into a ball in the palm put on a plate. Repeat this process until all the falafel mixture has been used up.
3.Put the batter ingredients in a mixing bowl & mix them up until you have a creamy, thick batter.
4.Dip a falafel ball in the batter, roll it around in the panko bread crumbs making sure you have a good coverage.
5.Deep fry the balls until the crust is golden brown & really crispy.
6.Serve immediately with hummus & salad.

Then I top them with cashew cream (or any other drizzle – like my tangy tzatziki or my current obsession sweet and spicy tahini drizzle), cherry tomato halves, avocado chunks, green onion slices, and sprouts! Everyone in the family is addicted to these yummy savoury pancakes.

Yesterday my mom made some cauliflower leek soup, this one was her recipe, it was super good and I added some marinara, garlic powder and nutritional yeast on mine :) It’s cold in a lot of places right now (except Miami), so soup might be something a lot of people are eating rn, just a guess🤷🏻‍♀️ Here’s the recipe
1/2 a head of cauliflower
1 russet potato
1 bunch of leeks
1/2 a yellow onion
3 garlic cloves
5 cups of veggie broth
2 cups of water
1 T of thyme
1 tsp of rosemary
**** put that in the instant pot for 25 minutes (or use another method)
Blend this, you can add nutritional yeast and salt to taste

It’s been at least 5 years since I’ve eaten conventional seafood 🦞 , but these crab 🦀 burgers definitely taste the part!  Here’s a feature from last week’s rotating menu:  Crabless Burger on a Gluten-Free Sourdough Bun with Sriracha Mayo & Coleslaw. 😋 
The “crab meat” patty is made with chickpeas, bread crumbs, hearts of palm (an excellent vegan crab “meat”, even flakes up like crab!) and dulse flakes for a “fishy” flavour.  Dulse is a nutrient rich red algae found along the northern coast of the major oceans 🌊 .  It’s similar to seaweed but contains more fiber and protein.  In addition to providing an umami flavour to foods, dulse makes an excellent supplement (I personally take 1.5 teaspons daily). It helps strengthen bones 🦴 , boost immunity 😊, fight disease 💪 and it’s also a powerful detoxifier.  Dulse binds to disease causing heavy metals such as mercury, lead and cadmium from some of the most difficult places to reach in the the body and holds onto it until it’s flushed out. 🚽 💩 😂 
There is still this notion that seafood is healthy for you and it’s simply not true. ❌  Most seafood comes from captive farmed fish/crustaceans that are fed GMO foods, antibiotics and live in overcrowded waste filled waters. 🤢. Even wild caught fish 🎣 live in waters polluted with chemical & waste run-off from farms, toxins such as mercury from the burning of fossil fuels and plastic waste.  Healthy seafood is a myth.  Be “sofishticated”, choose plant-based seafood options. 😆👍✌️🌱❤️

 Make your rice ahead of time and chill before making the fried rice. Shitake mushrooms add great flavor to your egg rolls. Mist your egg rolls lightly with coconut oil before air frying. Massage your cabbage with a tsp of salt, let sit for 10 minutes, squeeze excess liquid out before adding to sauted filling. It keeps your egg rolls from getting mushy. Use liquid aminos instead of soy sauce to cut down on sodium. A little bit of Sesame oil goes a long way. Kala namak added to crumbled tofu adds a sulfur

New recipe in the works and oh boiiiii it’s a doozy! When I was teen, literally THE only “meat” I would eat is a McDonald’s McChicken 🤷‍♀️and sometimes the craving for that crunch and flavour hits haaaaard. Since eating a chicken 🐓 is weird and eating McDonalds is kinda gross (no judgement people, do you 🤙) the whole McChicken thing is a def no-go. I have been experimenting with different options to create something sooooorta similar and found tofu to just be way too tofu-y and other options aren’t even worth being spoken about 🤐(hey, can’t win’em all). Last week I toyed with some soaked chickpeas and white rice, along with a small pile of other ingredients and sweet sassy.... I am getting close! Sooo this is just a teaser pic to plant the seed and possibly allow your interest to grow and to put pressure on myself to figure this out! Hope everyone had a great day and ate lots of yummy food 🤑

New recipe in the works and oh boiiiii it’s a doozy! when i was teen, literally the only “meat” i would eat is a mcdonald’s mcchicken 🤷‍♀️and sometimes the craving for that crunch and flavour hits haaaaard. since eating a chicken 🐓 is weird and eating mcdonalds is kinda gross (no judgement people, do you 🤙) the whole mcchicken thing is a def no-go. i have been experimenting with different options to create something sooooorta similar and found tofu to just be way too tofu-y and other options aren’t even worth being spoken about 🤐(hey, can’t win’em all). last week i toyed with some soaked chickpeas and white rice, along with a small pile of other ingredients and sweet sassy.... i am getting close! sooo this is just a teaser pic to plant the seed and possibly allow your interest to grow and to put pressure on myself to figure this out! hope everyone had a great day and ate lots of yummy food 🤑

A great and easy meal. I simmered some onion on olive oil -low to med.heat, added firm tofu cut up into cubes with some turmeric, sesame seeds and a generous splash of soy sauce.  When the tofu was warmed through and soaked up the sauce, I mixed in boiled beans and peas. That's it. Kid approved. 😋

So hubby is still at work, and the kids are in bed. I made them cabbage and carrot sambaro and chappati. So I’ve made myself Iceland no cheese and onion pasty. It was delicious. I loved it. BBQ Cauliflower Tacos by 🌱: @thewhitechestnut 
INGREDIENTS:
cauliflower sauce:
2 medium size cauliflower or a big size cauliflower
3 tbsp miso paste
2 tbsp ketchup-style sauce
1 cup water
4 tbsp maple syrup
1/3 cup apple cider vinegar
2 tbsp olive oil

cheese sauce:
1/2 cup cashews
1/4 cup water
3 tbsp nutritional yeast
a tsp lemon
a pinch of salt
a pinch of pepper
some chopped chives

or the tacos:
100g lettuce leaves
8 taco shells
a sliced avocado
red and orange sweet mini peppers chopped
some chopped red onion
some chives

preparation time: 15 minutes
total time: 50 minutes
serving size: 4 serves

METHOD:

Start by chopping the cauliflower and clean it well. Pour the ingredients for the cauliflower sauce into a food processor and blend them until smooth.

Incorporate the cauliflower to the baking tray and pour the sauce over the cauliflower, give it a good stir and bake it at 200ºC/400F for around 30 minutes.

Basically, you want to cook slow and really well the cauliflower to make sure that it gets all the flavors from the sauce and also the texture should be soft but not crunchy.

To make the cheese sauce, simply blend all the ingredients listed for the vegan cheese sauce and make sure that the texture is even, adjust salt and pepper if needed, then mix it with some chopped chives.

To serve the cauliflower BBQ tacos, warm up the taco shells, then add to each taco: lettuce leaves, around 3 tablespoons of BBQ cauliflower, some red onion, some avocado, a tablespoon of vegan cheese and top it all with chives and sweet pepper.
You’ll get 8 BBQ cauliflower tacos. Enjoy!

Have you ever cooked with jackfruit? It was really good!! Just as good as any meat curry. The jack fruit is sweet and almost like pork in texture.

Latest foodie picture. this is sri lankan spiced jackfruit curry.

have you ever cooked with jackfruit? it was really good!! just as good as any meat curry. the jack fruit is sweet and almost like pork in texture.

1 tomato, diced⁠
1 small onion, diced⁠

RECIPE BELOW | Stuffed aubergines today! To be honest you can just use whatever vegetables you like but this is my favourite combination at the moment. Hope you'll like the recipe 🌈✨🌍
Ingredients (1 serving):
1 aubergine
1 tbsp olive oil
Salt

1 onion
1 clove of garlic
5 cherry tomato
1/2 cup kidney beans
1 tbsp tomato paste
5 mushrooms 
Pepper, parsley

1 tsp tahini
1/2 tsp soya sauce
2 tsp water
1 tsp red curry paste

Method: 
1. First cut the aubergine in half and then cut out the middle part. 
2. Mix oil and salt and spread the mixture on the aubergine. 
3. Bake in the oven at 200°c or 400°f for about 20 minutes.
5. Meanwhile chop the vegetables and sauté with the cut-out aubergine. 
5. Fill the aubergine with vegetables and bake for 10 more minutes. 
7. Mix tahini, soya sauce, water and curry paste and season the aubergibes with parsley. 
8. Enjoy!✨🌻

I’m kidding guys - these are black sesame seeds 😍
But what I did do was accidentally add too much coconut milk to my chickpea curry, so it was basically chickpea curry soup 😂 still tasted amazing 💛

Recipe: (serves 2)
1. Fry chopped onion and garlic in a pan with olive oil and curry spice (of your choice)
2. Add chickpeas and any type of veggie - I like red pepper, spinach, zucchini, sweet potato, etc. 
3. Add a can of chopped tomato, some tomato paste and 1/2 can of coconut milk
4. Let this simmer for a bit. 
5. Serve with couscous, rice, avo, sesame seeds, or whatever your heart desires. .

i’m kidding guys - these are black sesame seeds 😍
but what i did do was accidentally add too much coconut milk to my chickpea curry, so it was basically chickpea curry soup 😂 still tasted amazing 💛

recipe: (serves 2)
1. fry chopped onion and garlic in a pan with olive oil and curry spice (of your choice)
2. add chickpeas and any type of veggie - i like red pepper, spinach, zucchini, sweet potato, etc.
3. add a can of chopped tomato, some tomato paste and 1/2 can of coconut milk
4. let this simmer for a bit.
5. serve with couscous, rice, avo, sesame seeds, or whatever your heart desires. .

When I was younger I thought brussel sprouts were disgusting... But now I can't get enough of them!! I love this roasted brussel sprouts with apples and caramelized onions recipe from @cadryskitchen Check out her website for the exact recipe because I modified a bit!

Ingredients:
1/2 pound Brussels sprouts sliced in half length-wise with ends removed
1 large apple cored & chopped 
1 teaspoon oil 
Salt to taste
1/2 medium yellow onion sliced 
1/2 teaspoon maple syrup 
Directions:
Preheat oven to 400 degrees.
On a lined baking sheet, toss brussels sprouts and apples with 3/4 teaspoon oil and a pinch of salt. Lay them evenly across the baking sheet, careful not to overcrowd.
Roast the sprouts and apples for 20 minutes, stopping once to flip. Don't flip the sprouts until they are nicely brown on one side. 
While the sprouts are roasting, put remaining 1/2 teaspoon oil in a skillet and bring to a medium high heat.
Add onions to the skillet with a pinch of salt and don't move them for a couple of minutes until they start to brown.
Once brown bits have started to appear turn the heat to low and continue cooking for 20 minutes, stirring occasionally, allowing them to caramelize.
In the last minute of cooking time on the onions, add maple syrup and combine.
Remove brussels sprouts and apples from the oven and add them to the skillet. Combine them with the caramelized onions. I served over couscous!

QUINOA & VEGGIE GOULASH🧡💚 🔸️2tbsp olive oil 🔸️1 onion, thinly sliced 🔸️ 2 garlic cloves 🔸️ 1/2 red pepper, chopped 🔸️ handful of cherry tomatoes 🔸️ 60g soya chunks 🔸️ 1 large potato, cut into cubes 🔸️100g butternut squash, cut into cubes 🔸️ 100g mushrooms, copped 🔸️ handful of romanesco florets🔸️ handdul of peas 🔸️ 1 cup water or vegetable broth 🔸️ 60g quinoa/cooked/ 🔸️ In a large skillet, heat the oil over medium heat. Add the onion, garlic, pepper, tomatoes and cook for about 3 to 5 minutes.
Add the mushrooms, potato, butternut, soya chunks, romanesco and vegetable broth.
Stir and season well, bring to a boil, cover, reduce the heat and let it simmer for about 20 minutes.
Add cooked quinoa, peas, gently stir, cook for few more minutes and serve warm.

Try it with a plum dipping sauce or throw them in some broth for a soup! 
RECIPE: Vegan dumplings!! 🥟🤤 (makes about 30)
👉🏼INGREDIENTS:
- pre-made vegan dumplings wraps
- 1 package extra firm tofu
- 1 T. avocado or sesame oil
- 2 t. garlic powder
- s + p to taste
- chili flakes, if desired
- 1 1/2 cups walnuts (bulk at @sprouts)
- 8-11 crimini mushrooms (bulk at @sprouts)
- 2 T. hoisin sauce
- 1 T. liquid aminos
- plum sauce
.
👉🏼METHOD:
1. Drain, squeeze out water, and crumble tofu into a hot pan with 1 T. of avocado oil or sesame oil. Season with salt, pepper, garlic powder, and chili flakes. Add hoisin sauce and liquid aminos. Leave it cooking and stir occasionally. Don’t be afraid to let it get a lil crispy. 
2. Chop the walnuts in a food processor.
3. Wash and chop the mushrooms in the food processor.
4. Once the tofu has begun to brown a bit, add mushrooms. Stir until they soften and add the walnuts. Let it sit and cook for a minute or two to let the flavors combine. Turn off the stove and remove from heat.
5. Prep your dumpling wrapping station with dough wraps, a bowl with water, and a DRY space to put your dumplings without crowding. Be careful not to wet the dough unless you’re folding the dumplings.
6. Work with one dough wrapper in your station at a time. Add about 1-2 T. of the filling onto a wrapper. Using your dominant hand lift the dough from one side like a taco. With the other begin to pleat the dough into about 1/4” overlapping pleats, directing the edge of the dough to the center of the dumpling. Wet your fingers as needed to give the dough grip. The consistency reminded me of throwing in ceramics class. Follow the edge of the dough, pleating in a circle until your pleats meet together in the middle. Pinch the top of the dumpling pleats together to seal it off. Set aside.
7. Set up your steamer. Add a tiny bit of oil to the bottom of the steamer so they don’t stick. Place 1 finger space from each other. Cook 9-10 minutes. Be aware of the steam when you open the pot!
8. Enjoy!
