A veggie mish mash delight for dinner. The base is a cauliflower puree flavored with a home made veggie stock I have posted previously. Then topped with pumpkin, peppers and zucchini, a sprinkle of sweet paprika and a dollop of a plant based yoghurt. On the side 2 falafel for a bit more substance. Not bad at all. .
