cooking: grab some ribeye caps (also called spinalis dorsi) or tie them yourself. cooked in cast iron over fire with a little canola oil, butter, & thyme. about 5 mins per side or until it hits 117f for medium rare. baste the steaks with a spoon after the flip in order to soak in all those juices. let it rest for 8-10 minutes and slice!
