New season and new tapas hitting the pass for this week’s special. Pork, fig and apple ballotine wrapped in serrano ham and served on a pea mousseline with a Pedro Ximenez reduction. Light and balanced, this special pairs perfectly with a glass of Pinot or a dry Pinot Rose.

We’ve been busy readying some new cocktails for the sunny spring days ahead.

In the meantime, you can enjoy this New Orleans Barrel aged sazerac that @44uglenncoco has been working on. 
Hennessy VS Cognac, peychauds bitters and simple syrup all poured into a barrel for 2 months, stirred down, spritzed with absinthe and a lemon twist.

Made even better when you add on a glass of house red for just $2,

Each week, as we edge closer and closer to spring, we’ll be pouring some thirst quenching lighter to mid bodied reds. 
Ania and the team have been keeping an eye out for those sessionable, crunchy and bright drinking wines - most with minimal oak use, some with stainless steel ferment, and some with carbonic maceration, purely with the spring and summer months in mind.
